Brunch Egg Bake
Loved this, made it for Christmas brunch. Made just as instructed, except used fresh mushrooms. I put it together the night before, refrigerated and baked in the morning. It took MUCH longer than 35-40 min, possibly twice that amount of time. This might have been becausew it was refrigerated? I ended up cranking up the heat to 400 and it finally set up in the middle. It was worth the wait though! Excellent.

Refried Beans Without the Refry
Subbed chicken stock for water. Used a can of green chiles in place of jalapeño. Need to eliminate salt altogether if using stock! Ran beans through food processor which made them creamy & delicious. Served with Cojita cheese sprinkled on top. Big hit at my carne Asada party.

Peach Pie
Bought a box of fresh peaches from a local fruit stand & made 4 pies. Used 1/2 c white & 1/2 c brown sugar. Added 1 Tbsp cornstarch & 1/2 tsp cinnamon. Used top crust because i didn't want to mess with lattice. Baked at 425 for 15 min then turned down oven for rest of baking time. Let pies rest in oven for a couple hrs to set. Served a la mode, of course.
