Best Tuna Casserole

Yum Yum! Simple and delish recipe however, I did make a few moderations: Instead of 2 cans of cream of mushroom, I used only 1 and added 1/4 milk + 1/4 alfredo sauce. I also used French Fried Onions instead of chips and spinkled with a thin layer of grated parmesan & mozzarella instead of cheddar.

Six Can Chicken Tortilla Soup

One word = DELISH! For a heartier, thicker soup... you can also add one (1) 10oz. can of cream of chicken and 1/2 cup of prepared/cooked rice. Feel free to use any kind of rice you'd like (i.e. plain white rice, yellow rice or even chicken flavored Rice A Roni). The rice definitely adds great texture and makes the soup more filling! Sprinkled with some Mexican shredded cheese and garnished with a few blue corn tortilla chips... and you've got yourself one hearty Mexican inspired meal!

Chicken Soup II

Great soup! I had a cold and instead of downing a can of condensed chicken noodle soup, I thought I'd make some from scratch. I love spinach, so this was right up my alley and the tortellini was a nice twist as well! I made a few variations---limited the onions and celery just because I'm not a huge fan. I did use fresh spinach instead of frozen and it worked just fine. Instead of meat, I used a three cheese tortellini and omitted the egg noodles (too much pasta). Finally, I didn't go through the trouble of taking the chicken off the bone (thought it made the soup more "hearty" and it falls right off anyway) and I also added a couple teaspoons of butter. All in all---this was a fantastic recipe! I served it with garlic bread and it tasted event better for lunch the next day!!!

Chantal's New York Cheesecake

Absolutely Delicish (in the words of Rachel Ray - LOL)!!! People would not believe that I made this cheesecake by myself. It was a perfect NY Style cheesecake - rich, thick, creamy and just the right amount of sweetness! I added a layer of strawberry glaze and fresh strawberry halves to top it off! Fabulous - this one is a keeper!

Restaurant Style Chicken Nachos

Great recipe! Simple, fast and a tasty snack! The only variation was that I used Blue Corn torilla chips (which made it nice and colorful) and I also added a side of sour cream at the end. Yummm!

Mom's Shrimp Macaroni Salad

This recipe is great for summer BBQ's to use in place of a potato salad or a traditional pasta salad. I thought it was pretty delicious... however, I made several variations to it to accomodate my taste. I omitted the relish, celery seed and horseradish. Instead of onion, I used scallions (green onion). Instead of chili powder, I used paprika. I also added crabmeat and sliced black olives. Overall... it was pretty good! I made this dish into a dinner with some hot garlic bread and wine.
