A Twist on Pasta Salad

I have used this several times with different combinations of meats, veggies and cheeses. It holds up well for several days in the fridge and the simple and light dressing is very versatile!

Penne Pasta with Spinach and Bacon

I really liked this, but I did have to make some modifications because I had no spinach at home. Next time I'm following it to the letter and expect it to be wonderful! I added chopped onion to the bacon and garlic, and I used turkey bacon and whole wheat penne. I also stirred in about a 1/2c of shredded mozz once I'd tossed everything, and will probably do this or add parmesan every time I make it. I had seconds, which I almost never do, and my husband asked me to fix the leftovers for his lunch(added some leftover baked chicken cut up at his request). I will definitely use this recipe again!

World's Best Lasagna

I love the sauce! We have cut way back on meat in our house, so I've been trying other things with this, the last time I chopped fine 8oz of mushrooms (one kid doesn't like them) and put them in to bulk up the sauce base--Wonderful! I layered in a mix of sauteed zucchini and yellow squash, which was good, but I used too much. I always put my noodles in hard (and I don't spend the extra for the special noodles) and I have never had a problem, the lasagna comes out nice and firm, because the excess moisture soaks into the noodles. I doubled the ricotta and egg mix because the first time it wasn't enough in my opinion, this time I had more than enough, will probably try to find a happy medium. Also, both times I've made this I put chopped fresh spinach in the ricotta mix, I love it this was and kids don't complain about veggies. I freehanded shredded mozz the second time I made, it worked just as well as the sliced, but I probably did use about 3c, not 2. I would love to try this with the meat, and I may next time I need to take a dish somewhere, but for home this veggie version works well.

Brandy Flamed Peppercorn Steak

Excellent! I added the mushrooms as some others recommended. The steaks were very tender and juicy, even the kid that never eats steak ate a small portion of this and liked it. I did all my dicing and chopping while I had baked potatoes in the oven, cooked these once I had them out and resting. Very good, will keep this in mind for when we have adult company to impress!

Ultimate Twice Baked Potatoes

These were excellent. I left out the bacon since my family are not fans, and the shells disintegrated on me a little, care needs to be exercised in removing meat once cooked. I would definitely make again, maybe adding a little garlic or substituting some ranch dressing for part of the sour cream.

Baked Potato Skins

My husband loved these, and I thought they were better than most we have had as appetizers. I found them a little tedious and time consuming to make, so they are definitely reserved for special occasions!

Chicken Piccata III

I would probably not fix this dish again. I followed the recipe closely and we all found it a little bland. I've never had another piccata recipe so I don't know how this compares. I served it with rice.

Best Ever Sloppy Joes

I made this in the slow cooker, browning meat and then stirring everything together in the cooker. It was very good, we were having a family gathering and almost everyone had seconds. I omitted green pepper, cuz I can't stand it, and I added a little minced garlic, doubled the recipe and used half ground turkey. I ran the crockpot on high for 3-1/2 hours and held it on warm for another hour. It was excellent and I would make it again, I had several comments that this was way better than the canned stuff!

Creamy Bratwurst Stew

Tasted okay, but a little blah. Brats didn't hold on to much flavor after cooking so long. Definitely "stew", very thick and filling.

Breaded Pork Tenderloin

Wow, this was excellent. I used the egg wash and olive oil as others suggested, but other than that followed the recipe. There's only three us, so I did wind up with leftovers, and they reheated well.

Aunt Millie's Broccoli Casserole

tasted good, got raves from the family. Used it for thanksgiving and it did not hold well in my opinion(while I finished up with other dishes), got dry and stuck to the pan. Either needs to be served immediately or I need to find a similar recipe that can be held warm longer.

Lisa's Chocolate Chocolate Chip Cake

I've been looking for this recipe, saw it years ago in a newspaper column as "Better than Sex Chocolate Cake". This is the same as far as I can remember. It's a great, moist cake that needs no frosting, so I love to take it to dinners or to work (no potential mess).
