Bow Ties with Sausage, Tomatoes and Cream
INCREDIBLE! I made this for my sausage-loving, pasta-reluctant husband. He LOVED it! He was also excited that we had a lot of leftovers for future meals. This is a simple recipe with a complex flavor. It doesn't get better than that. I followed the recipe closely, but I made modifications. I did not use the pepper flakes. I have a 5-year old who would have gone through the roof. As it was, the dish had a "kick" due to the Italian sausage. I would add the pepper for guests. (I would also add a great wine). I bought ground sausage in a roll so that removing a casing was not necessary. I used canned diced Italian tomatoes. I thought it would be easier than chopping them. I think that is the problem people are having. I would recommend draining the tomatoes first. The sauce did thicken, but it required more time to reduce than suggested in the recipe. This was an absolutely fabulous dish. It would be great for company or just as a casual "comfort" dish after a long day. Thank you to Linda for posting this one!

Pecan Chicken Breasts Stuffed with Cream Cheese and Broccoli
INCREDIBLE! I received rave reviews from my out-of-town guests. The meal looked like it fell out of a magazine. I reduced the butter to 2 Tablespoons as suggested--it turned out perfectly. The cooking time was grossly underestimated. It will need AT LEAST an hour. Don't be afraid of the prep work--it didn't take that long, and the reviews made it worth the time.

Parmesan Chicken II
Fantastic. The only thing I changed was seasoning the Parmesan cheese a bit more. I used "Tastefully Simple" seasoning salt. Fantastic. My husband and son raved about the meal. If these two picky eaters love it, it has to be great!
