Eggplant and Pepper Parmesan Sandwiches

Of course, with every recipe you switch it around to make it fit your palate. I did just this but it's five-stars for posting the idea! 1) Salt your eggplant slices to pull out the bitterness. Rinse before cooking. 2) Brush the eggplant and peppers with olive oil and then sprinkle with black pepper and garlic powder. 3)I followed another reviewer's suggestion and mixed feta with a touch of plain Greek yogurt to make it spreadable. Thank you for posting this!

Blackened Fish

I cooked in my cast iron pan on the grill outside using olive oil instead of butter. I used salmon and flounder for the fish. So glad I came across this recipe.

Cucumber Sandwich

It was very filling. I used homemade bread. I don't think I added enough vinegar or pepperocini because I didn't taste the vinegar at all and the pepperocini only minimally when I happened to get a slice.

Hummus Pizza

Yummy! I added red bell pepper, portobello mushroom and garlic, all sauteed. I also used mozzarella instead of jack. Never in million years would I have thought to use hummus! Thanks!

The crumbs have no calories or fat, right? These are wonderful! I, too, made a cookie cake out of it and then cut them into bars. Added the 1/2 tsp salt, also.

Icy Blender Lemonade

My 7 year old made this as a "potion" in her cauldron aka Halloween bucket. I didn't blend it since I don't have a blender and it tasted great. I personally wanted more lemons. DD said it was just perfect and now she wants to potion everyone up. Thanks!!

Gerry's Chicken Enchiladas

This may very well be the longest rating I've ever done. First, what a pain in the rear to make. I recommend heating the corn tortillas up in the microwave for a minute or so before you even bother with the cream. I'm not sure what the cream did for this, but whatever. I'm guessing that I didn't let them soak long enough and so they broke up which is why I heated mine up. Second, it's totally worth it! I marinated the chicken in one cup margarita mix & ground pepper. I used a poblano pepper for it's mildness. I drained the tomatoes and onions out of the soup to please the children. I made 4 with only the wonderfully seasoned chicken a small amount of cheese, topped with Hatch's Enchilada Sauce. I made 6 with all the fixings, which I added back into the chicken. I found I still had another 4 enchiladas to make and no soup left, so I rolled them up and topped it off with the half a can of enchilada sauce that I had left. I can't believe these annoyingly long-to-make enchiladas were worth the time and effort, but they were. Thank you, Gerry.

Mayonnaise Biscuits

Quite simple and good. Perhaps I have a sensitive nose, but I could smell the mayo. That might've been cos I used Miracle Whip Light instead of mayo. They were still good!!
