Easy Chili I

Ahh, finally! I never could get the ingredients correct when doing chili on my own w/out a package. I left out the jalapenos for the kids sakes. I added 3 TBS chili powder, 3 cloves of garlic, 1/2 TBS of cumin, 1/2 TBS of oregano, and a can of tomatoes instead of the sauce (only because I didn't have sauce on hand). I also cooked up my own pinto beans because I didn't have any red or pinto canned. Even if I didn't use the recipe to a T it gave me a base from which to build from. I'll make sure and try it the recipe way next time.

Fried Green Beans

I really enjoyed this recipe. If you don't like lemon, like rest of my strange family then I don't recommend it. The lemon comes off more strongly than one would expect.

Green Bean and Portobello Mushroom Casserole

This recipe really just gave my old fresh green beans a kick. I didn't add the cream of mush or the cheese because I like neither. I used fresh green beans and cooked them in a bit of water with the bacon, garlic, onion, and pepper on the bottom of the pan until right before the green beans were edible. I then added the mushrooms. By the time the mushrooms were done the beans were, too. It cut down on the fat and salt intake.

Mexican Cornbread I

This was pretty good. When I make Mexican cornbread I brown ground beef and mix it with taco seasoning. I then put it into a baking dish and top with the cornbread and bake according to the directions for cornbread. It's a meal then.

Very Special Spaghetti Sauce

I did a 6 person serving and it was still enough for an army. This was pretty good. I cut the wine down to 6 TBS for a 6 person serving because in my XP too much wine is not a good thing. I also only used 1/8 tsp of cayenne. Children do not like cayenne. The worcestershire was a pretty good add-in. I also would recommend making it with Roma tomatoes over any other tomatoes unless you have fresh garden tomatoes. The recipe didn't specify a certain type. Overall, I'd make it again.

Cream of Tomato Soup with Pesto

I used vegetable broth instead of chicken, added about 1/4C parmesan cheese to the pot, more like a 1/4C or so of basil pesto and coarsely crushed black pepper. It was pretty runny for a tomato soup, so I added 1TB of cornstarch mixed with 1TB of water to thicken it up. Pretty good.

Cobb Salad

This has always been a great salad to use up the stuff in the fridge before you head to the store again. We use a vinegar/oil dressing or lemon juice instead of Ranch. We also use Romaine, not iceberg.

Pasta Carbonara

It was edible. I don't cook boxed foods and this definitely tasted like it could have been one. The 11 yo was disgusted by it. I finally had to whisk the cream cheese to a smooth texture. It was a bust.

Chicken Flautas

I had so hoped this would be outstanding. Not at all. I was grateful that I had two of my local grocer's dressings to make it taste like more than chicken wrapped in corn tortillas. I think instead of salsa I'll use the dressings from the grocer instead.

Chili Rellenos Casserole

This is pretty good. I followed recommendations and added a third egg, Hatch's enchilada sauce and 1/4 tsp of cumin. My poor child couldn't eat it though because in my inattention I used medium heat enchilada sauce and it was very spicy. It took longer than 40 minutes to cook for me (closer to an hour) because I put it in an 8X6 pan instead of an 8X8 or larger.

Hurry-Up Ham Carbonara

I used butter instead of margarine, one egg instead of 2 egg whites; added garlic, mushrooms, and peas. I also realized that I didn't have enough ham leftover so I cooked 5 slices of bacon and used 1 T of the grease instead of oil. I really liked this.
