Sesame Shrimp Stir-Fry

It's very good, but it's NOT quick by any means. It took me more than 30 minutes to cook. Other than that it's highly recommended.

Ronaldo's Beef Carnitas

Very good. I don't recommend eating more than one or two because they fill you up and make you feel like you ate the Eiffel Tower. The second time I made them I used beef brisket that I'd already cooked and marinated in Claud's brisket marinade. I added all but the chili powder and wrapped them in tortillas. That was really good, too.

Cheese Biscuits I

Really good! I even screwed up (because I was talking to my brother!)and added the butter, garlic and parsley to the mix and then baked it. They ended up flatter than normal but still tasted good!

Beef and Vegetable Stew

This wasn't what any of us really expected. Hubby and I both think it was the tomato paste. The red color threw us off and we're tomato eaters. We may just have not wanted stew that night.

Green Bean and Portobello Mushroom Casserole

This recipe really just gave my old fresh green beans a kick. I didn't add the cream of mush or the cheese because I like neither. I used fresh green beans and cooked them in a bit of water with the bacon, garlic, onion, and pepper on the bottom of the pan until right before the green beans were edible. I then added the mushrooms. By the time the mushrooms were done the beans were, too. It cut down on the fat and salt intake.

Easy Chili I

Ahh, finally! I never could get the ingredients correct when doing chili on my own w/out a package. I left out the jalapenos for the kids sakes. I added 3 TBS chili powder, 3 cloves of garlic, 1/2 TBS of cumin, 1/2 TBS of oregano, and a can of tomatoes instead of the sauce (only because I didn't have sauce on hand). I also cooked up my own pinto beans because I didn't have any red or pinto canned. Even if I didn't use the recipe to a T it gave me a base from which to build from. I'll make sure and try it the recipe way next time.

I would've given it a one because I couldn't stand it. I was glad I had zucchini around to make zucchini grinders. My family loved this recipe, though, so I gave it a four.
