Transformed Spinach Mushroom Quiche

Saute the onions and mushrooms in butter until golden THEN saute the baby spinach (only used 3 oz). The garlic was a great idea. I also added thyme (about a tsp).

Spinach and Potato Frittata

I cooked my potatoes til golden and done in coconut oil seasoned with smoked paprika, salt, pepper, garlic and onion powders. I used collard greens because I'd gotten some from the CSA today and couldn't figure out what to use them for. I can imagine that this would have been very bland if I hadn't seasoned the potatoes first, but it's so versatile that I gave it four stars. I'd never made a frittata before; quiche, yes.

Swiss Chard with Garbanzo Beans and Fresh Tomatoes

I added extra garlic and used yellow onion because I didn't have shallots and green onions. I, too, used Fire Roasted Tomatoes with Garlic and I thought to add a few tablespoons of white wine. Thank you for the blend of garbanzos and chard! It was great!

Ciabatta Bread

I was troubled by the liquidity of this dough, but chose to wait it out and see. It tastes good, but it's not pretty and didn't rise nearly as much as it should have, in my opinion. It's edible and usable for the sandwiches, but I'll keep looking for a better one.

Hurry-Up Ham Carbonara

I used butter instead of margarine, one egg instead of 2 egg whites; added garlic, mushrooms, and peas. I also realized that I didn't have enough ham leftover so I cooked 5 slices of bacon and used 1 T of the grease instead of oil. I really liked this.

Simple Whole Wheat Bread

Wish I could add to the 5-star rating, but I can't. While the flavor was fine the second rising wasn't. It wouldn't rise any higher after the punch-down than 1/2 an inch and certainly didn't rise any higher in the oven. I tried twice. Moving on.

French Bread

I assume this recipe was a 5 before I followed Tony Kollman's recommendations and added the 1 TBS of butter and an additional 1/2 tsp of salt. This was my first ever handmade loaf of bread. It was excellent!
