Yummy Lemon Coconut Loaf
Very good! Changes I made based upon my pantry: 3 T bottled lemon juice to replace fresh lemon in the batter (measurements for drizzle were fine), and unsweetened fine macaroon coconut instead of flaked. The result? A rich tasting, buttery pound cake. The balance of lemon, butter and coconut was wonderful. This was very easy to make and will be part of my 'go to' recipes for quick, tasty evening meal desserts whose leftovers pair well with morning coffee. Yum!

Low-Cal Chicken
As stated by others, the temp is too high and timing too long for unfrozen breasts. I used breasts thawed 90% in the microwave, Truvia sweetener and freshly chopped garlic. I measured out my soy sauce and allowed the minced onions to rehydrate in the sauce. Prepared as directed (except for 45 minutes at 375) the chicken is fairly tasty but lacking in appearance. In future I will lightly sear both sides of the chicken breasts before adding them to the baking dish to keep more of the juices in the chicken, and I may also remove the foil for the last 10 or so minutes of baking. This should make less 'juice' in the dish but still keep it tender. All in all this was a very good, healthy main dish. Both my husband and small child enjoyed it. I paired with white rice and steamed broccoli which rounded out the flavor.

MMMMM... Brownies
Super simple and really, really good. The only change I made was to add a very small amount of corn syrup to keep the sugar from getting grainy (just a fail-safe I normally do), and I mixed in a few walnuts. If you prefer a gooey (as opposed to cakey) brownie, this is a no-fail recipe. (Stirring and butter amount can be a huge factor with cocoa powder recipes) My husband and my son were VERY please.
