Sicilian Lemon Chicken with Raisin-Tomato Sauce

So good!!! I made this recipe as shown except I added the juice from the tomatoes, homemade chicken broth, decreased the pasta by 1/3 and omitted the olives because I didn't have them on hand. Next time I may even try grilling the chicken.

Creamy Cheesy Scrambled Eggs with Basil

These eggs were a nice change to our Sunday morning breakfast. I used cheddar cheese instead of mozzarella because it was all I had. I also increased the butter just a little and included a dash of onion and garlic powder. So good!!!

Grilled Coffee and Cola Skirt Steak

Don't let the name of this recipe fool you, it's awesome. I couldn't find skirt beef so I used flap meat. It was marinated for 24 hours and grilled to perfection. The reserve sauce wasn't as easy to make as the video indicated, at least for me. My family however are still raving about it and the meat.

Chef John's Ranch Dressing

This recipe turned out as a great dip for my veges. I only used 1cup of mayo and tripled the dry ingredients for my family's taste. I may try this recipe again with even less mayo.

Chef John's Sausage & Shrimp Jambalaya

This chili is super flavorful. I was worried it wouldn't have enough heat for my taste but followed the recipe anyway. I didn'have white beans so substituted them with black beans. It was a huge success and my family loved it. I'm also into a colourful presentation and this chili was beautiful.

Chef John's Porchetta

The flavors of this dish are amazing. I followed most of the recipe as written, including the making the vinegar sauce. I'm a new cook so I couldn't imagine what that sauce would add to the taste. I almost left it out but was pleasantly surprised. We didn't have ciabatta rolls or pancetta so I used pretzel rolls and bacon. I'll make this again.

Baked French Fries I

These potatoes smell outrageously good while baking. I added a little salt though and baked them at 400°. You must watch the clock when you change the cooking temperature because the spices can burn before the potatoes do. I will make these again.

Homemade Chicken Gravy

How do I say yummy with my mouth full. This is an easy recipe that works. My husband has a lactose problem so I switched the butter and milk for less offensive ingredients. Then I made the gravy and added my own little touch. I will make this again, thanks chef!!!

Pineapple Pie I

I'm just learning to cook but I loved this recipe. I had everything in the pantry so I got busy. I followed the suggestion of some to use a graham cracker crust. I increased the coconut by 1/4 cup, used the entire can of pineapples and cooked it on the stove for 10 minutes first, as suggested.

Chicken Enchilada Soup I

This was so good. It's summer here and soup is on the bottom of my list but I'm glad I made it anyway. I didn't have chicken breast so I used legs and thighs. My chicken was grilled and added one ingredient that I do to this type of dish. My husband loved it. The portion size is generous. It's easy to make and I'll do it again soon.

Bronco Burger

Ooh, so good!!! I planned to make these burgers for the holiday and chickened out. The negative reviews scared me. The Bronco Burger in no way tastes like meatloaf. The only change I made to this recipe was to increase the Fritos, go easy on the oregano and make homemade steak sauce. Will I make them again, you bet!!! Thanks Chef!!

Cocoa Cherry Pork

Oh my, was this dish delicious!!! I couldn't find cherry perserves so I took a can of cherry pie filing and made my own. Although I'm not really a good cook, this recipe was easy enough to make me look good. I can't wait to make it again. Thanks Chef!!
