Jalapeno Popper Spread

Reviewed: May 27, 2008
This is definitely a keeper. I put panko bradcrumbs on top & baked for 20-25 minutes instead of microwaving & served with toasted french bread slices. Everyone loved it.

Peanut Butter Pie XIX

Reviewed: Mar. 10, 2008
Awesome pie! I made with a prepared oreo cookie crust & it was delicious. A big hit. I didn't use the 2nd container of cool whip, as I didn't think it needed it. You can always add it to each piece.

Goat Cheese Salmon

Reviewed: Mar. 7, 2007
This salmon was great! So easy and a nicer weekday meal than a boring, plain old everyday meal. My husband loved it. Definitely a keeper for me.

Pumpkin-Pecan Cake Roll

Reviewed: Nov. 24, 2006
Make this for Thanksgiving & was a big hit. Made it the night before & refrigerated. Turned out great & was easier to prepare than I expected. I think this will be a regular each year at Thanksgiving!

Sugar Cookie Cutouts

Reviewed: Apr. 10, 2006
Didn't work for me. I was excited to read all of the positive reviews for this recipe & thought this would be the recipe I was looking for. My cookies did not hold their shape well. I used 4" cutters & made the cookies thicker than traditional cutouts. I so wish it would've worked. I guess I'll have to keep searching :-(

Artichoke Chicken

Reviewed: Mar. 16, 2006
Chicken was good, but it needed salt. Chopped spinach mixed in the artichoke mix may be good also. I'm going to try that next time.

Pork Tenderloin in Bourbon

Reviewed: Mar. 16, 2006
I've made a recipe similar to this for years. I serve it to company all the time & it always gets RAVE reviews. There are a few changes I make: For one, I add a little more brown sugar to the marinade (I don't measure, I just throw it in). Next, it's best if you marinate it overnight (I do in a large ziplock bag). Then you MUST grill it (It tastes so much better this way). Finally, the best part: Serve it with the following sauce: Mustard Scallion Sauce: 1/2 C. sour cream, 1/2 Cup mayo, 1 Tbsp. dry mustard, 3 Tbsp chopped scallions, 1 1/2 Tbsp. white vinegar, and 1 1/2 tsp. sugar. (You may need to add more sugar and/or vinegar to adjust-I don't measure) Enjoy!

Beer Bread I

Reviewed: Jan. 6, 2006
Great recipe. I can't believe how much it tasted liked the more expensive boxed version! I didn't have self rising flour, so I did as others suggested & added 1 tsp. salt & 1 Tbsp. baking powder & it worked great. I also added 1/3 cup of sugar instead of what the recipe called for & drizzled 3 Tbsp. butter on top before baking. I used Becks dark beer. Everyone loved it!

Spinach Cheese Ball

Reviewed: Jan. 6, 2006
This was a hit at the New Years Party I attended. I used Lipton vegetable soup mix (the whole packet~doesn't come in .4 oz) because I was out of Knorr, but was still good. Will definitely make again.

Blueberry Cream Cheese Pound Cake II

Reviewed: Jul. 16, 2004
I made this cake twice. I used fresh blueberries both times. The second time I made it, I did not put in the additional 1/4 cup sugar that is called for. I liked the cake much better, it does not need the additional sugar, as the cake mix & pudding mix already has so much. This recipe is definetly a keeper!
