Pumpkin Spice Cookie

This cookies are great but they cook exactly the way you put them on the sheet. I recommend pouning the cookie sheet on the counter so the dough flattens out. I always add chocolate chips - their the bomb!

My Amish Friend's Caramel Corn

I used buttered microwave popcorn and salted butter istead of margerine. I think I could've omitted the additional salt. It was still great!!

Slow Cooker Chicken Taco Soup

I think this recipe is great because you put the chicken in raw rather than precooked. Fast to assemble. I used cumin as others suggested. Enjoy!!

Apple Dumplings I

I'm always worried that the apples won't be done when the dumplings are brown so I par-boil them first. I've been making this recipe since it was posted years ago and I love it. It's easy but looks fancy.

Pumpkin Pie Squares

This is an excellent pumpkin pie altrnative when you're out of round pie pans. The oat crust makes me people say "Wow, that is so good - what is it?" Easy.

This is a great alternative to a pumpkin roll. Just beware not to add to much milk to the frosting or it won't set up. In other words follow the directions.

Tater Tot Bake

I added frozen chopped spinich to my meat mixture. I didn't think it would fly but my kids didn't say a word and gobbled it all up. This is an excellent recipe to make ahead and freeze.

Sausage Potato Bake

I have to admit this isn't my favorite because I'm not a sausage fan but when it comes to preparation and picky childen (my husband loves it too) it's served on a regular basis. Use low-sodium ingredients or it will be salty. 5 stars for simplicity.

Baked French Toast

This is such a great recipe to make the night before and then pop in the oven in the morning. The kids (and adults) loe to watch the bread bubble up - it looks like it's going to burst. Don't worry once you take it out of the oven it floats back down. It's so much less time consuming then cinnamon rolls or sticky buns but with a similar taste.

Sauteed Apples

I've made this recipe a couple times and think it's great. This summer we were up to a full day of water sports. I didn't want my kids to be on a sugar high so I served brunch enchiladas and cottage cheese with sauteed apples. They loved it.

Black Bean and Salsa Soup

This was so simple and I had dinner on the table in less than 5 minutes. I took the suggstions of others by doubling the cumin, adding a little lime juice and reserving some whole beans to stir in right before serving. I didn't have vegetable broth so I used chicken broth granules and water. It worked great! This is definately a new family favorite.

Rich and Simple French Onion Soup

I cooked the onions as suggested but instead of simmering them I through the ingredients in the crockpot for a few hours. When I got home I just served up the bowls broiled the cheese and it was ready in a snap. I'd have to say it was the easiest meal I have ever prepared.
