Easy Mint Chocolate Chip Ice Cream

Really good and creamy. This was our first recipe for our new ice cream maker and it turned out delicious! Next time I will cut back on the sugar. It was super-duper sweet!

Banana Banana Bread

Moist and delicious! This recipe is a keeper. I had to use a glass loaf pan and it still came out perfect. The bread got very brown on the outside and I got worried but once I cut into it, wow! So good. I did add some vanilla and next time, (which will be soon)I'm going to add some walnuts.

Homesteader Cornbread

I made this recipe for the first time following the ingredients exact and it turned out perfect and delicious! The only thing I did different was use a cast iron skillet to cook the bread in and it turned out awesome. This sweet, cornbread recipe is a keeper.

Ricotta Cheese Pancakes

I have type 2 diabetes and because of this recipe I can eat pancakes again without raising my blood sugar! They are very tasty and I have made them about 15 times already. Even my husband likes them and he doesn't have diabetes. I just add a little vanilla and lemon zest to spice them up a bit. YUM

Best Carrot Cake Ever

Wow, this was fabulous! I read a lot of reviews first to see if there were any changes I should make. This is what I did. 1. Used a 13x9x2 glass casserole dish and baked for 55min. 2.Only used 1/2 c. oil along with 1/2 applesauce. -terrific advice!!! 3. Used 5 c. carrots (I used my food processor)4.Added lots of Allspice and nutmeg. I think I added about 1/2 cup extra of flour because the batter looked a little too runny. The end result to this recipe was MMMMMMmmmmmmm!!It truly lives up to it's name. "Best Carrot Cake Ever"
