Quick and Easy Pizza Crust

GREAT! I love how quick this is to make and it is very good. If you prefer thinner crust, you may not like this as well, however. It turned out very bread-like for me, and the dough was springy enough that I couldn't press it thinly into the pan, it just sprung back. It's not a heavy or greasy crust though, so it was good.

Italian Style Flounder

Simple, quick and inexpensive. I found that 30 minutes was WAY too long for baking, but my filets were pretty thin. I didn't have tomatoes on hand, so I used homemade salsa instead and sprinkled some part-skim mozzarella cheese on top, it turned out very well.

Bake Sale Lemon Bars

I left the crust as is, doubled the eggs and flour for the filling, put in 1 cup of lemon juice and 2 cups of sugar and baked on 350 - the bars turned out very well! The crust is a bit buttery for me, so next time I may tweak it and use less butter, though.

Taco Pizza

My husband and I instituted a family tradition of Fridays being Pizza Night to celebrate the coming weekend. As a result we are always looking for fun new pizza recipes and decided to give this one a try for our taco pizza attempt tonight. We both liked it very much and I made it mostly according to the recipe. The changes were that I made my own taco seasoning and omitted the extra chili powder and cayenne pepper, left out the beans (my husband won't eat them), made my own salsa from fresh roma tomatoes, cilantro, onion, lemon juice and salt and added a little sugar to the dough. The dough tasted more like bread than pizzs crust, but it was good. I liked the sauce, which I mixed with the salsa and will probably add a little more of it next time. I also used sliced fresh hot and bell peppers on top, fiesta cheese mix and made it into a big thin crust pizza on a cookie sheet instead of making 2 round pizzas. Very good!

Pizza Dough I

I made this at the last minute for dinner tonight, exactly as the recipe directed with no rising time, and it turned out great! This is a definite keeper for us - it doesn't get any easier or faster!

Broiled Tilapia Parmesan

Good, quick and easy - everyone liked it. It was a little greasy/heavy for my liking, so next time I am going to use light mayo and less butter. I also added 1/2 tsp of minced garlic and that worked out very well. You can experiment widely with the spices used and have a unique dish every time, which is neat.

Cheese Sauce Over Cauliflower

Sesame Tilapia

I made this for dinner tonight and we loved it! It was easy, quick (instead of baking it I pan-fried it for speed, worked out perfectly with the sesame oil already in it!) delicious and relatively low cost. We eat a lot of fish and are always on the prowl for unique recipes - this one fit the bill nicely and it will definitely go into my favorites to be made again. Thank you!

Yummy French Toast

This is good french toast, but I also found the nutmeg to be too much and next time would reduce it by at least half or leave it out completely. I also only got 7 pieces out of the recipe, maybe my bread was dry?

Quiche Lorraine I

This was the first quiche I ever made and it was wonderful! I followed the advice of a few other posters and added some extras: 2 eggs and another 1/4 cup of milk, 2 extra slices of bacon and another 1/4 cup of swiss, and made 2 quiches instead of one. I still had a little filling leftover, so I baked it in a pan and made a neat little crustless quiche for breakfast at work. My husband even liked it and he is THE pickiest eater I have ever seen. This one is going in my favorites file!

Luscious Lemon Snaps

I thought these cookies were really good - I made them today and have eaten WAY too many of them already! Not as lemony as I had expected, and I am going to cut the oil some next time, but otherwise I really like them. Also, I used PAM and had no trouble getting them off of the cookie sheet. On a scale of 1-10 I would rate these an 8 - Good Stuff!
