About this Cook
The most important areas of my life are my family and my animal rescue work. I am an avid animal lover and strive to help make the world a better, safer place for those precious little furry souls. Always remember - YOU have the power to save a life - Please consider adopting your new best friend from a shelter or a rescue and/or donating to one of those agencies as opposed to purchasing from a breeder or supporting the cruel puppy mills that supply many pet stores. Beautiful, healthy dogs and cats of all ages and breeds are dying every day for lack of a good home - spaying, neutering and adoption are the only way to put an end to the needless killing.
My favorite things to cook
I love to try new recipes, but don't like having to look for obscure ingredients.
My cooking triumphs
Anytime I find and cook a new recipe that my husband and I will both eat. He refuses to eat most vegetables, and I hate most meat, so cooking for us is quite the challenge!
My cooking tragedies
Usually involve meat. I hate most meats, but sometimes make meat recipes for my husband. Unfortunately, I tend to overcook it and make it a little dry. Nothing drastic, but not the greatest, either.

Quick and Easy Pizza Crust
GREAT! I love how quick this is to make and it is very good. If you prefer thinner crust, you may not like this as well, however. It turned out very bread-like for me, and the dough was springy enough that I couldn't press it thinly into the pan, it just sprung back. It's not a heavy or greasy crust though, so it was good.

Italian Style Flounder
Simple, quick and inexpensive. I found that 30 minutes was WAY too long for baking, but my filets were pretty thin. I didn't have tomatoes on hand, so I used homemade salsa instead and sprinkled some part-skim mozzarella cheese on top, it turned out very well.

Bake Sale Lemon Bars
I left the crust as is, doubled the eggs and flour for the filling, put in 1 cup of lemon juice and 2 cups of sugar and baked on 350 - the bars turned out very well! The crust is a bit buttery for me, so next time I may tweak it and use less butter, though.
