Ratatouille Soup

I made this with ground turkey and chicken broth to be more health conscious, but next time I will try it with beef. The turkey just seemed off with what I wanted to be a hearty soup. The other flavors went well together!

Tortellini Soup I

The tortellini was weird, my boyfriend took it out when he ate the soup. The soup was very oily and despite the vegetables, it felt so unhealthy.

Bob's Mexican Stuffed Chicken

I thought this was amazing! I usually manage to overcook chicken, but this came out moist and very tasty! I used a frozen bell pepper and onion mix (fajita vegetables) and thawed them in the skillet and then added to the chicken as directed. My boyfriend suggested adding Jalapenos, so next time we will try that!

Chicken Pot Pie IX

I used 2 cups frozen mixed veggies (corn, peas, carrots etc) and 1 cup chopped celery as the veggies, skinless boneless chicken thighs, a can of cream of chicken, 1 1/2 cups of chicken broth, and the roll out pie dough in the biscuit dough section. I brushed the bottom pie crust with an egg white and baked it for 5 minutes at 375 F. Then I mixed the filling with the liquid/gravy and poured it all into the pie pan (deep dish) then added the top crust. I covered the top edges with foil (to keep it from burning) and brushed the top with an egg white. I baked it for 45 minutes at 375 F. With those little tweaks, it was perfect!

Deep Dish Alfredo Pizza

We didn't have a deep dish pizza pan, so I had to go to the grocery store and buy 2 pre-made crusts (to hold all the toppings!). This pizza was amazing. Even my teenage brother had to admit it was good!
