Cranberry Pot Roast

I made this last night using the original list of ingredients; since the recipe does not specify, I used whole berry sauce. Though I switched the cook time and temperature to 8 hours on low, I changed nothing else. The meat cooked perfectly, but both I and my husband (who doesn't care for "unusually flavored" meats) thought the beef was terribly bland, with way too little cranberry flavor. The sauce was very, very thin, more a tasty broth than a sauce. We tried pouring it over rice, and it just fell straight through to the plate, though the whole cranberries did add a nice sweetness. In retrospect, I don't know why the flouring step is included. It does absolutely nothing to thicken the sauce, and I think browning without the flour would work just as well if not better, and with less mess. I will probably try this recipe again, but next time I will not add water and will probably add another can of cranberry sauce, perhaps regular instead of whole berry or a mixture. I will also deglaze the pan with red wine and the onions next time, as at least one other reviewer suggested. Definitely not a bad recipe, but it didn't meet our expectations as written.

Juiciest Hamburgers Ever

I made these tonight, using my George Foreman grill. While I don't agree with reviewers who say these burgers TASTE like meatloaf, I do agree that they FEEL like meatloaf when you're eating them; you don't get that hearty, ground-beef chewiness that you have with a more traditional burger made without bread/bread crumbs. These patties cook up very juicy, it's true, but they are also very smooth, for lack of a better word. Certainly there is goodness, especially if you bump up the seasoning to fit your tastes, but definitely not chewiness (I would not call them mushy, though). With all that said, my nearly-8-year-old daughter scarfed hers down and declared it was the best burger she's ever eaten, and she asked even before she finished when I was going to make them again. I personally enjoyed the taste, but I would have liked more of a meaty chew. That's just what I expect from a burger. Hubby also commented on the meatloaf-like texture, but had no problems with the taste, and the texture didn't stop him from eating two. Overall, it's a successful new recipe for us, and I'll make it again. Perhaps I'll scale back the bread/bread crumbs a bit and see if it makes a difference in the texture.

Chicken Thigh and Dumpling Stew

This had a strange taste, perhaps because of the paprika and/or vegetable stock. Next time I try it, I'll use just chicken stock and no paprika. It was otherwise very good.

I like herb breads, and this one was no exception. However, I will in future drastically cut back on the rosemary, as there was just way too much of it for my hubby and 7-year-old. Perhaps I'll try adding garlic in its place.

This is some terrific stuff, particularly if you have kids. My 7-year-old ate it up, as did my hubby and I. Great for leftovers, too. This one's going in my permanent files!
