Baked Parmesan-Crusted Chicken

Great kid friendly recipe. Season the chicken well with salt, pepper and garlic powder for better flavor. I also used dried herbs so I more than halved the amount added. Finally, pound out your chicken for a much faster cook time.

Blackened Fish

Fantastic! The amount of butter was a turn off for me, so instead, we just seared with olive oil and then completed with a pat of butter on top right before removing from the pan. I also added garlic powder to the seasoning. Quick and easy weeknight dinner!

Jo-Ann's Power Bars

So pleased to have found a versatile recipe for granola bars. Here are a few comments... 1) Done 'as is' the recipe comes out more cereal bar consistency than granola bar. I like mine a little crunchier so with the second batch, I formed them into bars before baking and they came out perfect! I saw a few reviewers doubling up the applesauce, so be aware before you decide to do this. 2) In lieu of the walnuts & fruits, you can substitute the same 1.5 cups of anything. We've tried mango with shredded and diced coconut and choc chip and coconut so far - delicious! 3) Taste before adding egg for sweetness. I actually only put 2 tbs. sugar and less honey bec I was using dried fruit which was already sweet. Plus, the 'raw dough' is delicious bec it has the crunch of the Grape Nuts :)

Chinese Chicken Salad III

Tasted fabulous. I would probably add some oil or something to thin the dressing out a little as it was a bit pasty. But delicious nonetheless! Bacon Wrapped Pork Medallions

Fabulous recipe... so flavorful with minimal ingredients and prep/cook time. Pork dries out so easily but this was moist and delicious. I doubled the spices and that was just about enough for 2 lbs of tenderloin. You may want to taste the spice rub and adjust for salt depending on how salty you want it. I may try with thick cut, lower sodium bacon next time around. Try it, you won't be disappointed! Served with roasted potato, carrot, brussel sprouts and mushrooms.

Yummy Honey Chicken Kabobs

Excellent, quickie recipe. I used only about 5 chicken breasts and found the marinade to be about right (leaving it for 24h). Added pineapples to the skewers for the kids, and used red instead of white onions. No other modifications were necessary! Served with coconut rice and veggie side. Great weeknight dinner.

Shish Tawook Grilled Chicken

We thought this was completely tasteless! I made it true to recipe and we were so excited to taste it bec it smelled awesome on the grill. It came out nice and tender but was so bland that we had to conjure up our own curry sauce to go with it. I suppose if you like really mild tasting chicken, try this. Else, I would at least double the spices I think, or let marinade more than 24 hours.

Hot Artichoke and Spinach Dip II

You'll want to swim in the heaven that is this dish! Best right out of the oven, but good even microwaved the next day (the crust is just not the same however) when I had to take it to a work function. Served it with both tortilla and pita chips. I could not find reasonably priced Romano, so I just split the difference between the Parm & Mozzarella and upped those. This will be a party go to for years to come!

Chicken Tikka Masala

Excellent and fairly quick to prepare. As other reviewers have stated, DEFINITELY at least HALF the salt, or it will be literally inedible the day of preparation after the sauce reduces. However, overnight, the leftovers did meld and while still on the salty side, the dish was much better and no longer sucked all the moisture from your mouth! Otherwise, no changes need be made to a winning recipe.

Baked Teriyaki Chicken

Great homemade teriyaki! The family gobbled it up served with brown rice & pan fried asparagus. Unlike other posters I found there to be exactly enough sauce without having to double the recipe or anything like that. I basted every 15 minutes. However, a word of caution, do not leave in the oven for much longer than instructed! I turned the oven off and left it to caramelize slightly as there was literally no caramalization... just a nice thick sauce. No more than 7 minutes later, the sauce had separated and sugars had burned. Chicken itself was still excellent but next time I'll leave it be, or drain off the sauce before trying to caramelize!

Berry Oatmeal Muffins

Wish I had read past the first page of reviews bec I agree with many that rated it 3*s - this was just ok. I substituted apple sauce for oil as many suggested and used strawberries in lieu of walnuts bec of nut allergies in my household. The wheat germ gave it a nice texture, but they were pretty bland overall, especially if you didn't come across a bite of fruit or 'streusel'. With all the many excellent healthy muffin recipes on this site, I won't be making this again.

Morning Glory Muffins I

The perfect muffin - moist, delicious and nutritious and so easy to make! Taking the advice of the other reviewers, I used 1/2 c apple sauce in lieu of apple butter and omitted the walnuts bec of allergies. I had wheat germ but totally forgot to put it on, and they turned out just fine w/out it. I'm going to use just 1c sugar next time as it was a smidgen too sweet for my taste. Otherwise, this one is a definite keeper!

Orange Streusel Muffins

We were out of everything but essentials and pantry items and I was looking for a baked good this morning and decided to give this a go. They were great - super easy and as I said, can be made with what's available on hand. Next time I will 'well' the marmalade bec some of it spilled out making them looking rather messy. I added a bit of orange juice and zest for added flavor. Also, for my 2nd daughter's dairy allergy, I substituted rice milk for milk and omitted the butter from her struesel. I also used white wheat flour instead of regular. Finally, made a couple with plum preserves for my older daughter who's not fond of marmalade. Any preserve would go well with this recipe but I agree w/ the other reviewer that if you like your muffins sweet, serve some jelly on the side as these are not very sweet at all.

Cranberry Orange Cookies

Delectable and so simple to make! These cookies are a keeper. I saw the 'not really a favorite of the kids' description and wonder if that was a typo because I'm not sure what there is not to like - my girls LOVED them! Note: mine were pretty soft and chewy, so you have to be a chewy-not-crispy cookie person.

Lana's Sweet and Sour Meatballs

Delicious, kid friendly, quick go to recipe. We used our favorite frozen meatballs to make this even simpler. Taste the sauce after it's mixed but before you put the cornstarch in - you should get a good idea of how it will taste when done and you can adjust accordingly. I only say this bec there were other reviews noting the sauce was too salty or sweet. I found it to be about right but did add some of pineapple juice for more flavor (I used fresh pineapple too). Definitely making this again!

Oven Baked Jambalaya

This is probably the best jambalaya my husband or I have ever tasted, homemade or at a restaurant. What's baffling is how simple the ingredients are! It was also the perfect prep ahead dish. I sauteed everything, added the whole tomatoes with juice and the meat and let everything blend overnight. Next day, simply added the broth & rice and popped it in the oven. I made a half recipe but kept roughly the same amount of meat/shrimp (as my husband is on a low carb diet) and everything still turned out nicely. Delicious!

Molly's Chicken

For convenience and taste, you can't beat this recipe! Combined suggestions from multiple other reviews, and made the following tweaks. Used light soy. Salt & peppered the drumsticks. Kept skin on them, but browned them well in some olive oil (so my cooking time in the crockpot is reduced) before transferring to the crockpot. Cooked 1 hour on high. Then 1 hour on low. Added onion, carrots & potatoes. Finished up 1 more hour on low. Served over jasmine rice with green beans for a side. Chicken was every bit as fall-off-the-bone tender and the family gobbled it up! This will be a staple weeknight go-to for sure!

This ridiculously simple recipe is amazingly delicious!! The pancetta and shallots make the dish so fragrant. We've also used it with asparagus with the same excellent results!

Roquefort Pear Salad

Delicious!!! My husband proclaimed this to be his favorite salad to date! We used Danish Bleu cheese instead of Roquefort, and only used a 1/4 cup of olive oil to keep it a bit lighter and it came out divine. A definite keeper!
