Slow Cooker Chicken Stroganoff

DELICIOUS! No other word to describe it! The only thing I do differently is put it over rice instead of noodles. YUM!

Cheesiest Potato Soup

Good! I added bacon but kept everything else the same. A bit of a process: cooking bacon, peeling & chopping potatoes, boiling, blending. Lots of dishes but well worth it!

Snickerdoodles V

Great easy recipe! I substituted 3/4 cup butter for the shortening and baked them for the minimum 8 minutes. If you put a paper towel over the cookies as soon as you transfer them to the cooling rack, they will cook a bit more, but turn out soft and chewy and remain that way for days (if the cookies last that long!)

Peanut Butter Pie I

Frozen Peanut Butter Cheesecake

YUM! This was delicious! I do recommend taking it out of the freezer at least 15 minutes before serving. The chocolate was hard to slice through when completely frozen. I also increased the choc. chips to 1.25 cups and decreased the cereal to 1.5 cups. The crust was delicious and the peanut butter mixture was VERY CREAMY. This recipe is a keeper!

Sicilian Ricotta Cheesecake

I made this recipe using ingredients appropriate for the South Beach Diet. This included: part-skim ricotta, liquid egg substitute, and sugar substitute (splenda). So sure enough it tasted like a "diet" cheesecake. I wasn't too impressed. Stick with the original recipe and cheat on your diet!

This meal is good for the "low-carb" dieter if eliminating the raisins and using a low-carb sauce. I prepared the meat the day before so the process wouldn't be so time consuming. This also helped the spices to soak into the meat and gave it great flavor. I tied the meat and didn't have any problems with the cheese oozing out. I also fried up some mushrooms and added them to the sauce. The only change would be to let the meat simmer longer in the sauce to let it get even more tender. Very tasty!

Nestle® Chocolate Chip Cheesecake

Very creamy! I made this cheesecake half plain and half with the chocolate chips. Believe it or not, but my husband does not like chocolate. He did enjoy the oreo cookie crust, however. Great recipe!

Beef Enchiladas II

YUM! This recipe was wonderful. I changed a few items due to personal preference. In place of the onion I used a green pepper and I stirred in taco seasoning when cooking the beef to add more flavor. I also opted for the canned enchilada sauce instead of the dry sauce. It was very tasty!
