Roasted Brussels Sprouts

YUM! My husband says a dollop of butter would have been better (what isn't better with butter???:), but we both enjoyed them as a very simple and healthy side dish. I used a bag of frozen b/s, and microwaved them til they were thawed but not hot, then added the other stuff and roasted for a little less time. We ate them with the French Chicken in Vinegar with Pepper Spiked Polenta. The chicken wasn't as good as the entire meal...or the sprouts. We'll make the sprouts alot for many different meals in the future.

Excellent and Healthy Cornbread

I've been making this since 2004-we prefer it over traditional recipes. I've added green chilis, corn, bacon, cheese, and pretty much anything else that sounds good at the time. I've also made it with 1/2 whole wheat flour. The recipe is a perfect cornbread as is, it's a little heavy with the whole wheat flour, and open to all sorts of experimentation. It's a perfect accompaniment to chili, too. Thanks!

Roquefort Pear Salad

This was great! I made the dressing and pecans a day early and assembled the salad about an hour early (I used Fruit-Fresh to keep the avocados and pears from browning) on Christmas day. It was a nice complement to Christmas dinner.

Veneto Chicken

This was only okay. I agree that there was nothing to balance the acidity, so there wasn't any real depth to the flavor. I added a bunch of Parmesan and a lot of salt and it was better. Maybe using chicken broth instead of the wine would help. This is a good base to start with, so I may play with it a little.

Banana-Zucchini Bread

I made this with 1/3 c. sugar, 2 c. zucchini and 4 overripe bananas. It is delicious! The cranberries and walnuts add a lot, as does the cinnamon.

Pizza Crust for the Bread Machine II

This was great. I made the recipe, divided into thirds and froze two. The other one I threw on the grill for grilled pizza. It was delicious and held up to the high heat and heavy ingredients quite well. Thanks!

Greek Pasta Salad with Shrimp, Tomatoes, Zucchini, Peppers, and Feta

This was great! I recommend grilling the veggies in the summer-it keeps the house cooler and has more flavor. I hate to admit that I made changes, but I followed other reviewers advice and made changes, and, in giving it a 5, I think it would be even better with the original ingredients. I wasn't sure if seasoned or non-seasoned rice vinegar was called for, so I went with the white wine vin. I also added some honey. Since I was out of red bell pepper, I used green. Other than that, I followed the recipe exactly and it was awesome. I think it would be good with chicken or shrimp. It was great to use homegrown veggies too. It was a nice, light (though not low-cal) meal for summer. Enjoy!

Black Bean and Corn Salad II

We love this as is. I have used the following modifications and we like it better with the changes. I use 1/3 c. oil and 1/3 c. lime juice, just to cut back on the oiliness. I prefer red onions to the green, and then add feta (cotija might be good to) This is a great dish-everyone loves it. It's great with chips as a dip or as a salad with grilled steak or chicken or fajitas. Perfect summer food!

Quick Chicken And Wine

This was okay. I took the advice of other reviewers and floured the chicken before dipping it in the egg and parmesan. The "breading" stayed on, but the flavor was nothing special. I ended up adding some shallots I sauteed separately, then some basil and it was a little better after that.

Coconut Ice Cream

This was great!!! We just had coconut ice cream while on vacation and this was a perfect imitation...minus the tropical breezes, anyway:) I toasted the coconut and crushed it a little before I added it to everything else. I've had some problems with it freezing correctly-I think the biggest thing is to not the coconut til the end. The high fat content makes freezing a little harder. Thanks for a great recipe.

Gordo's Good Venison

Spicy Black Bean Cakes

Really good! The jalapeno-lime sour cream was a good match and countered the heaviness of the cakes well. After mixing the bean cake ingredients together, I cooked one small cake to check the flavor. It was pretty bland so I added more cumin (about 1 T), plenty of oregano (2 T), some cayenne (1/2 t?), fresh cilantro (1/4 c) and garlic powder. There was a lot more flavor than the first cake I baked, so I would defintely recommend checking the seasonings with a small amount before cooking them all. Thanks for a nice change of pace!

Excellent! This was incredibly simple and incredibly good. I made it exactly according to the recipe and had it in the refriderator to chill within 15 minutes. I really liked that it just made enough for two. Thank you!

Paige's Feta Slaw

This was really good! I used Napa cabbage because that's what I had, and I added a little extra Italian seasoning on accident, and it was perfect. It went really well with steak and made a super easy, delicious meal. Thanks!

Cousin Cosmo's Greek Chicken

This really sounded great. I followed the directions exactly and was disappointed. There was very little flavor to the meal, other than the few bites of filling. I ended up dousing everything with Italian dressing, which really helped it out. Marinating the chicken in the dressing probably would have been a good idea.
