Avocado, Tomato and Mango Salsa

OMG!! This is a 10 STAR recipe. Everyone THINKS that this is such a strange combination but when you look at the ratings of over 630 people giving it 5 stars, well, you just have to try it for yourself to see!! You won't be sorry.

Blueberry Cream Muffins

Very tasty! I halved the recipe but still used 2 c. frozen (no need to thaw) blueberries. Other changes were: half white and half brown sugar, extra vanilla, also added 1 tsp. cinnamon and 1/2 tsp. nutmeg. I also topped the muffins with a crumb mixture of 1/4 c. brown sugar, 2 1/2 Tbs. flour, 2 Tbs. butter, 3/4 tsp. cinnamon & 1/4 c. chopped hickory nuts. My half recipe yielded 18 muffins.

Buffalo Style Chicken Pizza

Very good. I cooked and cubed the chicken the day before and let it sit in the hot sauce and butter for 24 hours. Ranch dressing with blue cheese and onions were my only additions. Yum!

Brunch Omelet Torte

Very good as is. However, next time I'll probably add bacon, sausage and mushrooms. The sky is the limit as to what you can put in the puff pastry shell. I'm thinking about a giant bacon cheeseburger for game day or meatloaf with mashed potatoes and a veggie. Yum!

I followed the recipe and found it to be very bland, so I added garlic and cumin to taste. So much better. Just add whatever spices you'd normally use in a salsa.

Antipasto Pasta Salad

This is a very bold and rather unique tasting salad. Although I personally love the taste, I haven't heard the raves that others speak of. Maybe I need different relatives and friends that will appreciate this recipe. Better yet, I'll keep what I have because that way I'll have more leftovers.

I have made this several times and have gotten to the point of totally leaving out the mustard and it tastes much better without it. I do add red pepper for taste and presentation.

My photo of the pie looks much better than the pie actually tasted. Served for Thanksgiving and not one compliment was heard. It is not that this was bad, it just wasn't good.

Blueberry Crumb Pie

Very good. Used 6 c. frozen/thawed blueberries and added 2 Tbs. corn startch. Only used 1/2 of the topping, otherwise it is too hard to cut a slice without the entire top caving in. You'll know what I am talking about when you go to slice a piece. Oh, and don't forget the ice cream.

Slow Cooker Beef Stew I

Stew is one of those recipes that just keeps growing until you find out it is too much to safely fit your slow cooker. I baked everything for 3 1/2 hours (covered) at 375. I added onion and corn to the recipe. Pretty tasty stew.

Blueberry Dump Cake

Very. very tastey. Here are the changes that I made with the recipe...I didn't have a yellow cake mix so I used a lemon cake mix. Many blueberry recipes include lemon juice, so I figured this would be alright. It tasted fabulous! I can't imagine it without the lemon cake mix. Also, several of the reviews on this recipe complained about the topping so instead of melting the butter, I used my food processor and cut cold butter into the mix. That way it would be evenly distributed. Instead of a 9x13 pan, I used 2 glass pie plates and divided the ingredients equally.

Never Fail Applesauce Spice Cake

Very moist and tasty. Instead of using a 9 x 13 pan, I filled 6 individual bundt pans plus 6 cupcakes and baked for about 20 minutes (till toothpick came out clean). I served this on Thanksgiving. See the photo of how the little cakes were decorated.

This is a keeper!!! My only change was to triple the recipe and added the cheese to the sauce and then mixed in the beans. This still easily fit a 9 x 13 pan. I predict that this recipe will be a big hit in the future. The sauce would work well with all kinds of veggies or potatoes.
