Classic Candied Sweet Potatoes

Cut down SIGNIFICANTLY on the butter, and still good. Added golden raisings, and that was an awesome addition!

Tortillas I

I made these twice - the first time they were not good. The second time I halved the recipe, used 1 T softened butter, added more salt, and used about 1 cup boiling water. Let rise 15 minutes. The best tip on this board is cook only 1-2 minutes on medium low heat (my burner was at about 3.5). They did not brown up, but were cooked and stay pliable. Second batch is delicious. Also, let go of the round shape. Much easier to make then. 1/2 of this recipe yielded 12 tortillas.

Potato Salad Soup

I would really give it 3 1/2 stars. I made as directed. Next time, I would definitely leave out the poultry seasoning. It definitely needed salt, but that is is easy to add. I also served with red wine vinegar at the table. Don't skip the egg - it adds an interesting twist.

Spicy Bean Salsa

Made for a party - was awesome. I had a ton leftover, so I mixed with coleslaw mix, shredded cheese, wrapped in tortillas, topped with more cheese and baked till cheese melted. Yummy veggie burritos!

Lentil Chili II

Missing a lot of flavor! I added a ton more chili powder. My suggestion would be to use this as a base and add veggies you like - zuhinni, red pepper would be a start!

Cheese and Sausage Appetizers

Dad's Pad Thai

YUM! My advice would be to make as written, and then change what you like/dislike the second time you make it. One note, I did not have fish sauce, and I used soy sauce and we still loved the recipe. Definitely on my repeat list, and I'm now going to save $$$ by not getting thai carryout!

Chilled Tomato and Avocado Soup

This was good and very refreshing. The soup is definitely more tomato than avocado. Would be delicious with real sour cream (of course). I also wonder if it would be better with lime juice instead of lemon juice.

Amazing Pork Tenderloin in the Slow Cooker

Not good. Made for dinner tonight, andI wish I could rid my kitchen of the smell this dish made. The reviews are all over the place - maybe I didn't use a good quality soup mix. I refused to eat it, my husband did eat it. Check out Kabob Marinade on this site, and use that for your pork tenderloin!

My Mom's Sausage & Rice Casserole

This was good, and I could see how it could be a side dish. As a main dish this feeds about 2 1/2 people. I also believe it needs more of everything - peppers, celery, and rice especially. I did not use the soup mix. Instead I subbed the soup mix and water with 1 can 50% less sodium chick. broth, and that seemed to work well. Do not skip the almonds - they add a delicious roasted crunch. We will definitely eat again!

Great Pumpkin Dessert

Hearty Vegetable Lasagna

The only reason I gave this 3 stars was because it calls for jarred pasta sauce. I made it twice - once as written and the second time with crushed tomatoes, fresh basil, fresh garlic. Much better if you make your own pasta sauce. I also suggest adding any veggie you love - mushrooms is a good start.

Kraut Bierocks

I love this recipe, and I just made it again last night for dinner. This makes a ton, and I always get to freeze an entire meal out of this. When I made the dough by hand, I had to add at least 1 cup if not 2 cups of flour. Now I use my dough hook on the kitchenaid, and I find this recipe perfect. The bun is sooo airy and light. My only substitution is butter instead of shortening. Great meal for a cold winter night.
