This is a favorite in our house. I, like others, only use half of the mayo. For the other half, I use plain greek yogurt instead of sour cream. VERY similar in flavor, but no fat! I also add a box of frozen chopped spinach (thawed), a second can of artichokes with a little of the juice, and some mozzarella cheese (I figure since the yogurt has no fat I can afford the extra cheese) to the mixture. I also brown the chicken, seasoned with salt and pepper, first; it gives it more flavor and it just looks more appetizing. In addition to the cheese in the mixture, I top the whole dish with a little extra parm and mozz before baking. With these minor tweaks to the original recipie, it becomes a 5+ star dish :)
