Tangy Slow Cooker Pork Roast

Great weeknight recipe! I used white wine vinegar because I didn't have any red wine vinegar. It was still very good but I would recommend cutting down on the sugar a little if you use that substitution. I served over egg noodles. The whole family loved it and made left overs!

Homesteader Cornbread

This is a delicious basic cornbread recipe. You could make half and it would be plenty for four people (of course you would have to use a smaller pan).

Chicken Jambalaya I

I too doubted this recipe based on the ingredients but it's excellent and surprisingly easy and fast. I used fresh garlic and fresh grape tomatoes (they explode as the heat - yummy). I also left out the celery since I didn't have any. I had some frozen chicken tenders so I just threw them in with the rice (still frozen) and they all finished cooking together. I didn't add the hot sauce because of the kids. I served theirs with ketchup and ours with hot sauce. Everyone loved it - even the two year old. Thank you!

Raspberry and Almond Shortbread Thumbprints

Yummy! These are beautiful, easy, and delicious! My kids loved them! I used vanilla extract instead of almond b/c I didn't have almond and I thought the kids might like them that way. I was right! Big hit! Thanks for the recipe!

White Chocolate Raspberry Cheesecake

This is simply devine! Mine came out perfect!! I also used oreo cookies for the crust (about a sleeve & 1/2) and only about 3 TB of butter (no sugar). Perfect!

Cracked Sugar Cookies I

Yummy! I didn't have cream of tartar so I used 4 tspns. of baking powder and eliminated the baking soda as a substitute. Worked great. Delicious!

Curry-Coconut Shrimp

Italian Spaghetti Sauce with Meatballs

This was awesome! I only had a can of diced tomatoes and a can of stewed tomatoes (both only 16oz.) but it still tasted great! I threw in a few grape tomatoes just because I was so short on the canned ones. I also used crushed saltines instead of bread crumbs for the meatballs. Wonderful - will make again and again.

Cheddar Bay Biscuits

These biscuits are delicious! I could have eaten half the pan! These are wonderful with any seafood dish. They are easy, fast, and inexpensive too! Highly recommend it.

Scrumptious Seafood Linguine

Excellent. Next time I'll make more. I used regular sized shrimp and chopped them up. I also didn't have cream so I used skim milk and a few tablespoons of cream cheese. I added garlic too. Great!

We loved these. I also added shredded cheddar cheese but you could probably add anything you like on your baked potatoe. More work but worth the effort.

Apple Squares

These are delicious! Great afternoon snack with tea or coffee and the kids love them! I used half whole wheat flour and half all purpose. I also used a little less butter than the recipe called for (because I ran out) so I substituted a little canola oil. Turned out perfect. I didn't use the topping in this recipe because I had some left over from the "to die for blueberry muffins" recipe from this site. I saved it in the freezer for a recipe just like this.

Sopapilla Cheesecake Pie

I have to admit that I didn't think this would be very good based on the ingredients but I was assigned dessert on a Mexican dinner party so I gave it a shot. Wow is it good! As a HUGE chocolate fan, I'm surprised to say that this is my new "go-to" dessert. Wonderful & easy. I couldn't find the mexican vanilla but I just used really good quality pure vanilla extract and it turned out great. Didn't modify the recipe a bit! ***REVISION*** I cooked it for 45 minutes.

Frosted Cranberries

I thought they were a little tart but people loved them at our Family Thanksgiving yesterday. They are beautiful and very festive. I used corn syrup because I didn't have any pasturized egg whites. Next time I'll try to find the egg whites. Also, this would be delicious combined with some candied orange peels mixed in. Love it - thank you for the recipe.
