Broiled Tilapia Parmesan

Very, very good. I don't even really like fish. I followed the directions exactly and it came out perfect. Pretty presentation too - better than the picture. Thank you! UPDATE: I made this last night with Dover filets. I rolled thin pieces of asparagus and strips of red roasted red peppers in the fish filets and then put the sauce on top. Served over wheat cous cous. It was amazing!!

Baked Sweet Potato Sticks

Yummy - these are delicious! I didn't do it right - I way overcrowded my pan and cut them to skinny but they were still yummy! Next time I'll try to make more of a wedge shape and use less so they won't overlap on the pan.

Very good weeknight dinner. Affordable too. I used ground chicken, fat free beans, and skim milk (cut calories where ever I could) and it turned out great - very flavorful. Good addition to the weekly rotation.

Chicken Fricassee

Excellent. I did do a few things differently. I wasn't paying attention and I went ahead and cooked the chicken until it was done during the browning phase. Then I realized they were supposed to finish cooking in the water. So, instead of putting the chicken back in the pan with the water, I added rice instead. Then I removed the rice, onions, etc. and cooked the gravy. This was soooooo good! Thank you!

This is simply devine! Mine came out perfect!! I also used oreo cookies for the crust (about a sleeve & 1/2) and only about 3 TB of butter (no sugar). Perfect!

Easy Roasted Red Pepper Hummus

It's good but it needs something. I added olive oil like someone suggested and cumin but it's still lacking flavor. I didn't add the basil. I also added salt. I don't think I would add the olive oil next time. The olive oil overpowers the delicate taste of the hummus.

Frosted Cranberries

I thought they were a little tart but people loved them at our Family Thanksgiving yesterday. They are beautiful and very festive. I used corn syrup because I didn't have any pasturized egg whites. Next time I'll try to find the egg whites. Also, this would be delicious combined with some candied orange peels mixed in. Love it - thank you for the recipe.

Sopapilla Cheesecake Pie

I have to admit that I didn't think this would be very good based on the ingredients but I was assigned dessert on a Mexican dinner party so I gave it a shot. Wow is it good! As a HUGE chocolate fan, I'm surprised to say that this is my new "go-to" dessert. Wonderful & easy. I couldn't find the mexican vanilla but I just used really good quality pure vanilla extract and it turned out great. Didn't modify the recipe a bit! ***REVISION*** I cooked it for 45 minutes.

Scrumptious Seafood Linguine

Excellent. Next time I'll make more. I used regular sized shrimp and chopped them up. I also didn't have cream so I used skim milk and a few tablespoons of cream cheese. I added garlic too. Great!

Mediterranean Quinoa Salad

Very good! I left out the chicken and added cucumbers, subbed green onions for red onion, yellow bell pepper, and halved cherry tomatoes, hearts of palm. Didn't really adhere to quantities in recipe - just made a huge batch. I also didn't use this dressing, I used another greek dressing recipe from this site. Yummo! Definitely adding this one to the rotation.

Shredded Chicken Tacos

These were delicious! I didn't use any of the chili or hot sauce because my husband's allergic. I also didn't brown the chicken first. I just cut it into cubes and threw it in with the sauce to simmer a while. The whole family liked it, even the picky 4 year old.

Yummy! These are beautiful, easy, and delicious! My kids loved them! I used vanilla extract instead of almond b/c I didn't have almond and I thought the kids might like them that way. I was right! Big hit! Thanks for the recipe!
