Spaghetti Pie III

I just did ground beef with my regular spaghetti sauce instead of the bellpeppers and all that. I really enjoyed it. It's a good addition to our family's recipe rotation. Thanks!

Broiled Tilapia Parmesan

Very, very good. I don't even really like fish. I followed the directions exactly and it came out perfect. Pretty presentation too - better than the picture. Thank you! UPDATE: I made this last night with Dover filets. I rolled thin pieces of asparagus and strips of red roasted red peppers in the fish filets and then put the sauce on top. Served over wheat cous cous. It was amazing!!

Chicken Fricassee

Excellent. I did do a few things differently. I wasn't paying attention and I went ahead and cooked the chicken until it was done during the browning phase. Then I realized they were supposed to finish cooking in the water. So, instead of putting the chicken back in the pan with the water, I added rice instead. Then I removed the rice, onions, etc. and cooked the gravy. This was soooooo good! Thank you!

Pistachio Cake III

This was wonderful! I made it in two round cake pans (if you make it like this you have to cut the cook time back a litte). I didn't have any almond extract but it tasted fine with out it. I also made a cream cheese icing, added a layer of crushed pineapple and thick vanilla pudding to the middle, and finely sprinkled the top and sides with some toasted coconut. It was amazing - one of my favorites. Next time I might try finding a way to incorporate more pastachio pudding in the icing.

Manicotti Alla Romana

This recipe is awesome and it didn't take nearly as long as the recipe states. I used jumbo shells and fresh spinach because that's all I had. I just mixed in the fresh spinach with the ricotta (uncooked). I also sprinkled parm. cheese over the top before baking. I'll make this for company - it looks really impressive and will feed a lot of people. Thanks for the recipe - I LOVED IT!
