Cheddar Bay Biscuits

Reviewed: Feb. 8, 2010
These biscuits are delicious! I could have eaten half the pan! These are wonderful with any seafood dish. They are easy, fast, and inexpensive too! Highly recommend it.

Chicken Piccata II

Reviewed: Feb. 6, 2010
Very good but I prefer it served over angle hair so I like to have more of a sauce to go with it. I like the chicken recipe though. I deglazed the pan with white wine before adding the bouillon water and I also added capers, more water, and a cornstarch slurry to make more sauce. It was delicious with these modifications!

Easy Roasted Red Pepper Hummus

Reviewed: Jan. 9, 2010
It's good but it needs something. I added olive oil like someone suggested and cumin but it's still lacking flavor. I didn't add the basil. I also added salt. I don't think I would add the olive oil next time. The olive oil overpowers the delicate taste of the hummus.

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Reviewed: Jan. 9, 2010
My husband loved this but I just thought it was OK. I think it would have been 5 stars if I had used real ginger instead of powdered ginger. The powdered ginger gave it a bitter taste. I also cooked it in the oven because it's too cold to grill. I'll try again with real ginger and grill it in the spring.

Mandarin Orange Cake I

This is delicious and refreshing. I made cupcakes with it and had plenty of topping to spare. Very easy and tasty. It would be a great Easter cake.

Homesteader Cornbread

Reviewed: Jan. 9, 2010
This is a delicious basic cornbread recipe. You could make half and it would be plenty for four people (of course you would have to use a smaller pan).

Frosted Cranberries

Reviewed: Nov. 27, 2009
I thought they were a little tart but people loved them at our Family Thanksgiving yesterday. They are beautiful and very festive. I used corn syrup because I didn't have any pasturized egg whites. Next time I'll try to find the egg whites. Also, this would be delicious combined with some candied orange peels mixed in. Love it - thank you for the recipe.

Spinach Brownies

Yummy! Mine didn't set up very well right out of the oven but was nice and firm when reheated the next day. I used fresh spinach. DELICIOUS!

These are awesome!!! I also cut the recipe in half and added craisins. YUMMY!!! Mine were very flat but were still great! Next time I'll try another reviewer suggestion to make them a little fluffier.

Sopapilla Cheesecake Pie

Reviewed: Oct. 11, 2009
I have to admit that I didn't think this would be very good based on the ingredients but I was assigned dessert on a Mexican dinner party so I gave it a shot. Wow is it good! As a HUGE chocolate fan, I'm surprised to say that this is my new "go-to" dessert. Wonderful & easy. I couldn't find the mexican vanilla but I just used really good quality pure vanilla extract and it turned out great. Didn't modify the recipe a bit! ***REVISION*** I cooked it for 45 minutes.

Cabbage Rolls II

Reviewed: Sep. 14, 2009
Great week night meal. It makes a lot too! Great way to stretch the buck! We had this for dinner twice and still had enough left over to bring for lunch. I didn't use the lemon juice because I didn't have any. Other than that, followed it exactly and it was very good. I will double the sauce next time because the recipe as is definitely doesn't make enough.

Apple Squares

Reviewed: Sep. 14, 2009
These are delicious! Great afternoon snack with tea or coffee and the kids love them! I used half whole wheat flour and half all purpose. I also used a little less butter than the recipe called for (because I ran out) so I substituted a little canola oil. Turned out perfect. I didn't use the topping in this recipe because I had some left over from the "to die for blueberry muffins" recipe from this site. I saved it in the freezer for a recipe just like this.
