Biscuit Topped Breakfast Casserole

I couldn't find the Stouffers' potatoes, so I used frozen hash browns instead. Casserole was a little dry because of this. I may use the recipe again, but I will need to modify it somewhat.

Tarragon Chicken Casserole

I used fat free half & half as well and it was just fine. Also, I noticed that the casserole tasted considerably better after sitting overnight. Very easy recipe.

Pasta with Scallops, Zucchini, and Tomatoes

Fantastic recipe - A new household favorite! I did add extra olive oil, garlic and salt for more flavor. I also simmered the broth a little longer than suggested to allow a rich tomato broth to form.
