Chicken Enchiladas II

This is a great recipe! Very quick and delicious! For a "kid friendly" version I make it without the chiles and have even used cubed Banquet brand chicken tenders instead of the chicken breast meat. Always turns out great either way :)

Easy Mexican Hot Chocolate

Very good!! This is a nice alternative to plain old hot chocolate. Rich and deep flavors with a little bit of spice :) I added some rum flavoring to my cup ;)yummmmm!

Peanut Butter Vegetable Chicken Soup

Honestly, this really was the best soup I have ever tasted. I can't even believe that I made it! a couple of changes I made - I used frozen California blend vegtables (zuch, carrots, pea pods, lima beans) and canned diced tomatoes with jalepenos. It really added some heat and gave the soup a real thai flavor along with the peanut butter. My friends thought I was nuts for even printing this one out, but I am so glad I did! Now I am nuts for this soup!!

Chicken Melts

Delicious! Very quick and easy to make. I didn't have mozarella cheese so I used swiss and cheddar instead. If you are looking for a simple and tasty sandwich spread, you should give this one a try!

Saltine Toffee Cookies

YUMMM!!!! This is a great recipe! Turned out perfect. The only thing I did was double the boiling time to ensure that the toffee wasn't gooey when it set up. I used milk chocolate chunks instead of semi sweet chips. Tastes like a Heath Bar but better!! Easy, cheap (considering how much one batch makes!) and delicious :) I keep the crumbs in the freezer to use as an Ice Cream topper!!

Double Layer Pumpkin Cheesecake

WOW! This was awesome! I made my graham cracker crust and I used 3 blocks of cream cheese instead of 2. After I put the 1st layer down on the crust, I added one can of pumpkin (instead of 1/2 cup)to the remaining mix and an extra egg. I also added extra of all the spices- we like a lot of spice :) Baked it for an hour in a springform pan and it was wonderful! My cheesecakes always crack, but when it is covered in whipped cream, no one's the wiser. Very good recipe for the Holidays. Thanks!

Blue Cranberry Sauce

My family really enjoyed this cranberry sauce! It was a nice change from the usual cranberry sauce we have at Thanksgiving. I used orange juice instead of water to add a little citrus flavor. I also had to adjust the sugar to make it a touch sweeter. Very unusual but very delicious :)

Creamy Cheese Bread

I made this for an office potluck - I just put the spread into the crockpot on low- once it was melted together I turned it down to warm and it was awesome! I had slices of crusty bread for everyone to dip with. The office loved it!! I got 10 requests for the recipe that day. Then I made it for a football party and even the men were raving about it! I added about 1/3 envelope of Knorr vegetable soup mix to the recipe and added some more cheese :) - for a little something extra.

Baked Pork Chops I

I made this recipe for my father's birthday dinner.. he's a tough one to impress and he LOVED IT!! The chops stayed tender and juicy and the flavor was excellent! Thanks for a great recipe. He has already requested that I make this for every birthday from here on out!

Pasta Carbonara I

This recipe was easy, inexpensive, and delicious! I added some some onion and garlic while the bacon cooked and it added a really nice flavor. I reheated it for dinner again tonight- just added a little milk to the skillet and it tasted just as great as the night before. I highly recommend this recipe :)

Banana Bread VII

This banana bread was awesome! The bisquick made is so simple to make. I don't like nuts in my banana bread so I didn't use any and it still turned out perfect :) I will be sharing this recipe with my friends and family for sure!
