Modern Pasta e Fagioli

I enjoyed this recipe, although being half black I felt I had to cook the collards much longer than 10 mins, more like 40. Next time i might use less pepper flakes.

Cucumber Orange Carrot Juice

I enjoyed this, the carrot was the star. But I think the recipe might be improved with an addition of a stalk of celery and a bite of either ginger or a dash of cayenne pepper. Overall, its a recipe I would repeat.

Peach and Mint Juice

Of course I cheated and used a juicer, and the technique really does make the juice. When I juiced it, the mint flavor didn't come thru and that is what I really wanted. I also think I could have chosen a better quality peach, I think that would have added the extra sweetness.

Apple Squash Soup

I made the vegan version (water for broth and olive oil sub for butter) and was wanting a bit more kick. Flavors were great but a little too subtle for me. I added 1/2 tsp minced ginger 1/2 tsp cinnamon and salt/pepper to taste and it really elevated the flavor. Great simple recipe for fall.

Authentic New Orleans Red Beans and Rice

This is the boyfriend's favorite so far and I use it as a guide line. Instead of the ham hock/ shortening I put in a good amount of bacon fat which is something I normally just have in the fridge. Such an easy meal to prep in the slow cooker, that's what I love the most!

Mojito Sorbet

Yumm! I used even less lime just over 1/4 cup and more mint 1 cup like the other reviews it was awesome (I was looking for more of a sweet effect) plus I added another TBSP of rum and it was Perfection. It is such a great palate cleanser, nice and refreshing!

Beverly's Get Up & Go Breakfast Cookies

I alter this a lot. I use fresh squeezed orange juice with some added brown sugar to sub for frozen mix. I use oatmeal for the cereal, add nuts (pecans or walnuts) sometimes dried cranberries too. They never stay in the house long!

Caramelized Chicken Wings

I like this one, simply and people love it. I reduce the sugar a bit and have tried it with drumsticks but still prefer wings. I also like to get this recipe started and then stick it in the crock pot. That makes it simple and easy for travel purposes like company picnics.

Cuban Marinated Steak

Used Skirt Steak so I could cook it in the frying pan. It was awesome, and the hubby loved it. My version of Montreal-style seasoning has a lot of salt in it, so for next time I will use less, to get a cleaner taste.

Chicken Pot Pie IX

Love it. I often don't go word for word on many recipes but this one is great starting off point. I am always trying to add more veggies, whatever is in the fridge, reducing the butter etc. But what is great about this recipe is that it has such a classic taste that most people will love.

Watermelon Sangria

Love it. Used all the watermelon, which was for me 3/4 of a big melon. The straining part was crucial and brought the volume down tremendously. I didn't love the lime pieces, will probably just put in a 1/2 limes worth of juice instead. And for easy eating I just used canned mandarin oranges instead of the real fresh deal. That way without the chunks of lime and fresh oranges the fruit is easier to eat in your drink (less peeling involved). This was in the magazine!!
