Pumpkin Gingerbread

Only change I made was using applesauce instead of oil. Perfect!! Even got the approval from my FIL who "hates pumpkin bread." Thanks for a great recipe.

Overnight Coffee Cake

A very nice, simple and easy recipe. I wanted to follow it exactly - but did not have sour cream. Used 1 C of french vanilla yogurt instead - turned out wonderfully. Will definately make again when in a pinch and do not have fresher ingredients for zucchini coffe cake, etc.

Lemon Cranberry Muffins

Delicious!! I used dried cranberries, lemon zest from a whole lemon and sprinkled raw sugar on top instead of almonds. I also tripled the recipe and used 2 c white sugar, 1 c brown sugar. They are soft and very flavorful! Will definately make this again and again!

Crustless Spinach Quiche

Wonderful recipe! I didn't have muenster cheese, so I used 2 cups Mozzarella and 1 cup sharp cheddar. Definately can't wait to make again with the Muenster! I lightly greased mini muffin pans - this recipe was enough for about 40. Will make again!

Sourdough Tomato Bread

Very tasty! I followed the instructions for the soft crust, and even though it came out rock hard, softened up wonderfully! I also added 1 tsp basil and 1 tsp crushed red pepper flakes, along with 4 slices of pepper jack cheese. Will double those next time. Thanks for the great recipe!

Overnight Cinnamon Rolls I

wonderul, easy recipe!I used my KitchenAid kneading attachment, everything turned out perfectly. Next time I will leave out the raisins, just a taste preference. Thank you for the wonderful recipe!

Lemon Macaroon Tartlets

I added 1 tsp of Lemon EXTRACT (not juice) to pump up the tanginess. This was perfect after a heavier dinner and easy to make. Everyone loved them. Thank you for a great recipe.

Boiled Fruitcake

Great recipe! I did not wrap the pans with paper & they still turned out perfectly. I doubled the recipe for two pans. Used 2 C raisins, 1 C dates, 2 C craisins, 6oz pineapple and 2 C apricots instead of the cherries and citrus peel. 1 tsp cloves & 2 tsp cinnamon - the perfect amount. The house smells wonderful too!

Fruitcake

I tried this recipe 3 times... doubling each time. Only the 1st time was ONE cake alrite. Every other cake crumbled upon coming out of the pan. I want to love this recipe, the crumbs were delicious... but I just could not get it to work.

Salmon Fillets with Creamy Dill

Great recipe! Even my two-year old, who wont eat meat - LOVED this! Although you only need 1/3 of the mustard & mayonnaise like others have suggested. I had to throw away quite a bit. Definately will make again!

Baked Teriyaki Chicken

My 2yr old daughter who refuses to eat meat LOVED this! I used lite soy sauce and lined the pan with tin foil. I also added chunky pineapple to the pan and poured the rest of the sauce in...I did not brush it over the chicken every 10mins and it still turned out wonderfully! Definately a keeper!

Easy Chicken Rice Casserole

I only made enough for 2 people but sitll used a whole can of cream of chicken. I'm a fairly new cook and this recipe did not specify wether you should cook the chicken first or not. I did and it turned out ok - I was very liberal with the seasoned salt, and added chili powder and garlic salt. Not GREAT but not bad.

Baked Spaghetti I

Very good. I added a little bit more oregeno and was very generous with some seasoned salt. I only used a 14 ounce can of tomatoes - and there was still plenty. Also used Colby Jack cheese - will definately make again, a big hit with the BF. Although he did suggest using Rotini pasta next time.

Husband's Delight

Loved this!! Took advice and browned onions with meat, used 8oz cream cheese and definately more shredded cheese on top. Also mixed it all together and put tin foil on top for last 15 mins. The only thing my bf suggested was that he would like the sour cream put on top after baking - so we will try that next time! Thanks for the recipe!! I loved it!!
