Jersey Fresh Tomato Soup

Reviewed: Jul. 12, 2013
For those of you out there who are like me reading this recipe and thinking to yourself "Oh, Ill just use canned crushed tomato/pureed tomato because that's all I have on hand" DONT DO IT! Just go buy the fresh tomatoes! And while you're at it go pick up a pint of heavy cream. The roux with milk was a disaster every time I re-made it and came out chunky in my soup (ew). Looks aside, the flavor was halfway decent. Thick and slightly chunky tomato soup spiced up with chilli powder and a couple dashes of Franks Red Hot sauce in addition to the above seasonings. Made an OK bowl of tomato soup to be paired with my grilled cheese sandwich for tonight's dinner. Any remaining soup will be tossed.

Orange Honey Garlic Chicken

Reviewed: Jun. 9, 2013
Marinade is awesome! Not too sweet, and made the chicken turn golden brown and crispy skin on top in the oven. I HIGHLY recommend using chicken with bone and skin on. I noticed from other reviews that people complained their chicken came out too dry and I think it's because they used skinless and boneless chicken which will dry out super fast in the oven even if you double the marinade, etc. I baked the chicken with potatoes, carrots, and onions but I wish I had fresh veggies to go as a side instead. Definitely will try this recipe again soon!

Green Beans with Almonds and Caramelized Shallots

Reviewed: Jun. 6, 2013
Great side dish I used to pair with roasted chicken. Flavor is light and slightly creamy. I used frozen french cut beans and it worked well with the shallots. The almonds are absolutely the best part about this dish so do not compromise on that part! Really easy to make and it please everyone at the table! Definitely will make again soon!

Banana Banana Bread

Reviewed: Jun. 6, 2013
First time trying out this recipe. I did end up over stirring it which caused it to be more dense but it was still nice and moist. I only had two bananas on hand but that wasn't a big deal either concerning taste/texture. My only problem was that this banana bread didn't come out nearly as sweet as I thought it should (figures; only called for 3/4 cup of sugar!) I would highly recommend using 1/2 cup of sugar or adding chocolate chips to it. I spiced it up with a pinch of unsweetened cocoa powder, nutmeg, cinnamon, and 1 tspn vanilla extract. Despite not being sweet enough it is tasty enough and pairs well with a nice cup of coffee or tea!
