Flatlander Chili

For a spur of the moment decision this came out great! I tweaked it a little based on what I had handy, halving the recipe (I'm one person...I can't eat chili for 10 days..) and adding diced tomatoes with jalapanos in place of the tomato juice. I like my chili more solid than soupy :) Used leftover frozen onions (didn't measure) and green peppers (didn't measure those either) and left out the celery because I didn't have any. Came out great though--easy recipe to remember the next time I'm in the store and an older gentleman says "Today is football day!!" and I think to myself..hey...chili sounds good! :)

Easy Sugar Cookies

These are really interesting!! They didn't flatten out the way I thought they would but they were soft and chewy, even at 10 minutes baking. I have yet to figure out how to put sprinkles on well so they're even (I guess next time I'll do it in the dough rather than on the mounds) but they still came out great! Tasty and soft!

Easy Meatloaf

This was FANTASTIC. I have been trying for years to replicate my mother's meatloaf, and this one is the closest I've gotten! It was absolutely perfect with no changes, substitutions, or modifications at all. I remembered someone mentioned worcestershire sauce after it was in the oven but it honestly didn't need it. And it was CHEAP to make! I paid $6 for the meat (yesterday's, sale rack!) and another few cents for the onion and everything else was a staple I keep in the house. I'll admit to more than one serving tonight!

Classic Peanut Butter Cookies

These are AWESOME!!! I did take others' advice and added a bit more flour (I live in CO, cookies come out flat if you don't add flour) and I cooked them for 8 minutes and they were chewy and perfect!!! I kept putting the batter into the fridge between batches--my kitchen gets HOT and I didn't want to risk it them melting in advance! Excellent recipe!

Turkey Pot Pie II

Came out GREAT! Next time I'll leave out the milk or add less of it so the inside is not quite so watery, but I'm sure it'll set up a bit after it's been refrigerated. Love it though!

Southern Grits Casserole

The taste is awesome, and I love grits and eggs very much, but the only issue I had was that it didn't set up very well. I'd hoped to wrap "bars" to take with me to school for breakfast, eliminating the need for a container, but it's just too wet and won't hold a shape to do it. I'll still make it again, because I absolutely love how it tastes, and I need a good, non-Starbucks purchased breakfast :) This was altogether less for 16 breakfasts than I pay for ONE at Starbucks :)

Slow Cooker Kielbasa Stew

This came out really great! I had to change the servings (cooking for 1 with a few leftovers, and the original would have had me eating this for several weeks!) and used just a can of kraut. Probably a bit too much, but it gave GREAT flavor. I'm sure I'll be making this again!

Ground Beef and Cabbage

I'm at month's end (I get paid once a month and there usually isn't a lot of $$ left by the last week of the month) and this was nice and inexpensive--and very tasty! I prepared it just as directed. And I have leftovers for lunch/dinner for the next few days too!

Baked Garlic Parmesan Chicken

I made just one serving (ah the life of a single girl!) and used PAM spray rather than olive oil (realized I was out!), and used regular Panko bread crumbs, but otherwise kept things the same. Turned out great! Easy to make, quickly done so I can eat! Served it with salad and on top of leftover couscous. Positive I'll make this again!

Best Tuna Casserole

I had to modify things a little because I had some of this and a little of that and not enough of the other! I hate when that happens! I used 1 can of soup, and added 3/4 a can of water, Panko bread crumbs (no chips in the house!), and a bit extra of mushrooms because I had fresh ones I needed to get rid of. I usually try so hard to do recipes by the book, but I have been craving this for a WEEK! It came out really good though, despite my screwing around with amounts of things!
