Shrimp Summer Rolls with Asian Peanut Sauce

These were yummy. The possibilities are endless. I've been making lumpia for 30 years. I usually saute the filling (I use pork, bagged slaw, add garlic & onions), let it cool a bit & wrap in only romaine leaves. You can use just about any combo of vegetables & cooked meat or make them totally vegetarian. Serve raw in rice papers or lettuce or wrap in a spring roll or egg roll wrapper and deep fry. For dipping, I make an egg foo young sauce; cornstarch, soy sauce, etc. You can even use sweet and sour sauce out of the bottle. And of course, there's peanut sauce. Make it your own. They go fast at parties! Just be sure you cook your meat thoroughly.

Mashed Potato Tacos

These are sold in the streets in Mexico. I make this my own by using my favorite taco toppings or add chopped green chiles, sauteed onions and garlic for a 'chiles rellenos' flavor. Use garlic mashed potatoes, add corn, taco seasoning, whatever. To make it lower in fat, I omit the butter, use lo-fat cheese and sub lo-fat yogurt for the sour cream.

Easy Venison Stew

Very good recipe for venison. The meat was so tender and not at all gamey tasting. Added potatoes, bay leaf, majoram and thyme. Made a 2nd time and used 1/2 buffalo and 1/2 venison. The strong flavor of the buffalo overpowered the venison. Will stick with all venison from now on.

Spinach and Potato Frittata

If I could give this recipe a 4.6, I would. I used chopped vidalia onions and added them and the garlic to the potatoes when the potatoes were about 1/2 way done. Also doubled the spinach. Had to put under the broiler to finish the eggs off. Topped with an additional 1/2 c. mozarella, cooked bacon pieces, sliced tomatoes. I also added basil pesto. Served with sour cream on the side. Very "tuscan". Light and delicious. I look forward to adding different things next time - maybe cooked italian sausage, mushrooms and fire roasted red peppers.

Penne with Garlicky Broccolini

Yummy. I used sweet italian sausage instead of bacon. I also cooked the broccolini with the pasta (added it in when the pasta was close to being done). A few red pepper flakes and a little extra olive oil make this a tasty and easy meal.

Sesame Pasta Chicken Salad

Sorry, but we just couldn't get into this. First of all, the oriental flavors didn't mix well with pasta. I reduced the amount of oil and doubled the sauce as recommended by other reviewers. The amount of sesame seeds, however, overwhelmed the salad and made it taste bitter. Perhaps this salad could be made better with the addition of some additional vegetables. Regardless, flavoring Italian pasta with Asian ingredients doesn't work for us.

Old Bay® Shrimp Salad

We love Old Bay, but this recipe could have used a little bit less than called for. It was a bit too strong for our taste. When we had the leftovers the next day, the shrimp salad was delicious. Perhaps the extra time allowed the flavors to meld together. Next time, I will definitely make ahead of time. Thanks for the tasty recipe!

Classic Greek Salad

A good salad, however, one needs to adjust the seasonings to taste. I've been a dinner guest at many greek households, and this salad was not as authentic or as refreshing as it should be. The McCormick's Greek seasoning is a bit overpowering. I suggest experimenting with the salad dressing ingredients before adding them to the salad.

Delicious! I used pork tenderloin instead of lamb. I also drained the yogurt and squeezed out the excess water from the cucumber. Everyone loved it. Thanks for the great recipe.

Early Morning Oven Roasted New Potatoes

Wonderful! Light and aromatic - a delicious addition to most meals. I previously used olive oil in my own version of this recipe but will now switch to butter. I served this with dijon/pecan crusted salmon and steamed broccoli. Defiitely a keeper.

Chicken In Sour Cream

Great comfort food. Easy and delicious. I made a couple of changes due to previous comments. I doubled the cream of mushroom soup, sour cream, lemon juice and dill weed. It was not too salty and I had extra sauce for rice. Will definitely make again. Yummy!

Chicken and Green Bean Casserole

Great recipe. Easy, too. Tastes even better the next day. The first time I made this, it came out watery and the chicken was not done. The second time, I cut the chicken into smaller pieces before browning, added the parmesan to the soup mixture and sprinkled a little more over the top. I also increased my oven temperature. Yummy!

Gerry's Chicken Enchiladas

My family really enjoyed this dish. I made it for my husband's birthday. I plan to make it for an upcoming potluck dinner as well. It was labor intensive, but there are shortcuts you can take. I did not marinate the chicken or cut into small pieces. Also, I used flour tortillas, and didn't need to use the cream. To cut down on the reducing time, I omitted the chicken broth. Instead of the 12 chile peppers, I used a small can of green chiles. I also pureed the sauce, because my family doesn't like 'chunky' vegetables. I served spanish rice, refried beans and salad with guacamole, sour cream and taco sauce on the side. Very good and satisfying!
