Luscious Chicken Pot Pie

This chicken pot pie was delicious. I only gave it four stars, because i didn't follow the recipe exactly. First, I boiled the chicken. In another pot, I boiled two potatoes, two carrots, two stalks of celery and two cups of green beans I had blanched and froze from our garden, along with a chopped onion. I boiled the vegetables for 25 minutes, until soft. Next, I cut up chicken. I drained vegetables, and added to a casserole dish,and added the chicken. Next, I added the two cans of cream of chicken soup, mixing until combined with chicken and vegetables. To cut back on calories, I didn't add a bottom crust.I topped the casserole dish with a store bought pie crust. Baked 350 for 45 minutes. My husband and i both enjoyed it, and my husband asked for seconds. There is plenty left to have again tomorrow night. It's comfort food as we are having a blizzard, at the moment.

Butternut Squash Casserole

I made this recipe for Thanksgiving, and what a hit it was. I microwaved the squash for 5 min, and it was very easy to peel and cut. After boiling the squash for 15 min, I used a hand mixer to mash it. I modified the ingredients and mounts, as I didn't want a sweet vegetable. I omitted the white sugar, but added 1/3 cup of brown sugar. I drained the can of pineapple, and put the juice aside, as i didn't use it. I used less the amounts called for when adding the cinnamon, nutmeg, and vanilla.I omitted the nuts. I put it in the 2 qt casserole, and baked 40 min at 325. My family loved it, and I plan on making it for Christmas too.

Chunky Chicken Noodle Soup

I made this soup for the first time tonight, and my husband and I loved it. I used the recommended 3 quarts of water, and it wasn't too liquidy at all. In fact, I ended up adding more water before reheating the soup for supper. While the stock was heating up, I cut up raw chicken breasts, added frozen peas, along with the carrots, celery and onion. I then added black pepper, basil, and oregano. Since bouillon was already added, I saw no reason the add more salt. I cooked the soup for 20 minutes, then added the egg noodles, and cooked another 15 min. I made the soup in the morning, and just needed to reheat later on for supper. We had corn muffins and a salad with it. It was the perfect meal for a rainy day. My husband had two bowls, and there is plenty for tomorrow night too. This will be a go to chicken soup recipe.

Italian Vegetable Soup

LOVED this soup, I modified it though, with what I had on hand. Since I had a busy day ahead, I threw all ingredients in the crock pot. I used beef broth instead of vegetable broth. Also, I didn't add kidney beans, as my husband doesn't care for them. Otherwise, everything else I added as directed. I added elbow macaroni an hour before serving. We had a salad and dinner rolls hot out of the oven to complete the meal. There is plenty leftover to have again tonight.

Pineapple Upside-Down Cake VII

This cake is delicious. First, I used other reviewers suggestions, and made the cake in a 13x9 inch pan. I used yellow cake mix, and instead of water, added pineapple juice. I had to add just a tiny bit of water, then added veg oil, and eggs as directed. This cake is moist, and the taste of pineapple, cherries, and brown sugar add to the flavor.This recipe will be our dessert for Easter.

Stuffed Green Peppers I

I modified this recipe to my family's liking, but since it's so similar, I gave it a five star review. First, I cut the tops off five green peppers, and cleaned them out. I cooked up a 1/2 cup instant rice. In another pan,heated a can of tomato soup with water. Next, I took 1 1b hamburg meat, diced onion, not measuring, just adding enough to my liking. I also added black pepper, and garlic powder. Next, I added the rice, and mixed together. Then I stuffed all the peppers, put them in a casserole dish, and poured the tomato soup over them. I bake at 350 degrees, for 1 hour. I just put them together, and they are in the oven for tonight's supper. We'll have it with rye bread and a salad. This is a family favorite, one I learned from my Mother.

Aw-some Coleslaw

I made this recipe for the first time today. First, I modified the ingredients since I'm just making this for my husband and I. I didn't measure the cabbage, just added enough so we can have it for a couple of days. I added peeled carrot, and 1 tsp each of vinegar, sugar, and lemon juice. I omitted the milk and onion. I didn't measure the mayonnaise, just added enough to make the consistency we like. We're having it tonight with fish,fries, and a garden salad. This is the best cole slaw ever, and I plan on making it many more times, THANKS!

Slow-Cooker Corned Beef and Cabbage

This is the only way I make corned beef. In fact, I just put it all together in the crockpot.The only change I made was, I didn't add beer. Instead, just enough water to cover everything. I'll cook it on high all day, and add cabbage about an hour before we eat. We'll have rye bread with it, and will have leftovers tomorrow.

Potato Skillet

This meal is wonderful First, I par boiled the potatoes, as I find they cook quicker that way. I added garlic powder instead of garlic salt. When the pototoes were almost done, I added onion. The remainder of the recipe I made as written. We had this for supper tonight with fruit, toast and coffee. it's a keeper thats for sure. My husband can't wait for me to make it again.

Downeast Maine Pumpkin Bread

made this bread a couple weeks ago, and froze it to having this morning with our Thanksgiving breakfast. I followed it pretty closely, but did make some changes. I felt three cups of sugar was way too much, so instead, I used 1 cup of white sugar, and 1 cup of brown sugar. I followed the rest of the rcipe., adding a cup of walnuts to the first batch, and choc chips to a second batch. My loaf pans were big, so we got two loaves each. WE had the bread with walnuts ths morning, and the one with choc chips, we'll have for Christmas.

Apple Oatmeal Crisp

I made this apple crisp for the first time today, and both my husband and I loved it. The only thing I changed was I cut the white sugar to 1/4 cup, as I didn't want it too sweet. We waited for it to cool a little, then we just had to try a piece. I'll be making this again. THANKS!

Granny's Italian Zucchini Pie

I made this recipe for the first time tonight, and it was such a hit. I was concerned because I used zucchini from our garden that had been blanched and frozen. No worries there, I just drained the water out, and sauteed the zucchini with the onion. Also, instead of crescent rolls, I used a ready made pie crust, the kind that comes rolled up in a box. I added all spices mentioned, and mozzeralla cheese. I was concerned about the yellow mustard but it gave the dish extra flavor.This dish with a salad makes for a perfect meal. I'll be making this dish again THANKS!

Baked Eggplant Parmesan

What a wonderful recipe. This is my first attempt at ever making eggplant parmesan. My husband picked two eggplants from the garden, so I thought this would be a good way to use them up. What drew me to this recipe is, the eggplant is baked and not fried. My husband and I don't care for fried foods. I followed the recipe pretty closly, but I went by another review and baked the eggplant for 7 mins on each side.1 8oz bag of shreeded mozzarella cheese was enough. The pan was pretty full, and i was afraid it wouldn't be cooked enough, so I put it in the oven for 50 mins. It was perfect. My husband loved it. I made a salad and served Italian bread with it. We have enough eggplant for leftovers tomorrow night. Thanks so much for such a great and easy recipe. This will be a keeper in my home.

Slow Cooker Beef Stew I

The recipe is wonderful! I made this beef stew for the first time tonight, and my husband loved it. I put the stew meat in a bowl, and coated it with flour. Since we like lots of vegetables, I added two stalks of celery instead of one. Instead of garlic cloves, I added two tsp of granulated garlic. I also added 1 1/2 can beef broth, which was just enough to cover all the ingredients in the crock pot. I saved the rest of the beef broth, and I'm glad I did, as I needed more liquid for the leftovers. i just added the rest of the broth to the remaining stew. We also had a salad and corn muffins to complete the meal. I'll be making this stew over and over again! THANKS!

Rempel Family Meatloaf

I made this meatloaf for the first time tonight, and my husband and i loved it. I think though next time I'll had a full cup of crushed crackers. The meatloaf fell apart a little when I was putting it on a serving plate. Other than that, I followed the recipe exactly. The meatloaf has such flavor. I think it's the combination of onion soup, and cheddar cheese. I'll be making the recipe again. I served a salad, and boiled red potatoes with it.

New Red Potato Salad

This recipe is so good, easy too. I made this potato salad for the first time today, but modified it to my family's tastes. I boiled the potatoes about 15 min, after cooling, I added onion, two hard boiled eggs, and mayonnaise. I didn't measure mayo or onion, as I know how much we like in our salad. When salad was well mixed, I topped with paprika. We had ham and a garden salad with it. I'll make this potato salad more often, it's a nice change from the tradional potato salad I've made for years.

Bacon and Potato Soup

This soup is delicious, very hearty and flavorful. I went by other reviews, and pureed half the soup in the blender, leaving some chunks of potatoes and other vegetables. Also, I added the shredded cheddar cheese when I served the soup, garnishing with parsley. I served grand biscuits and a salad with it. It was the perfect meal, as we had a blizzard yesterday, and spent a good part of the day TRYING to shovel out.

Chicken Pot Pie III

What a wonderful recipe, real comfort food. I had to make changes, as I didn't have everything on hand. I used one can each of cream of chicken, and cream of mushroom soup. I also used green beans, I had frozen from our garden. I wanted more vegetables, so I also added two diced carrots, and one stalk of celery. I added thyme, and topped with pie crust. With a salad, this was the perfect meal. I'll make this again for sure.

Italian Sausage Soup

What a nice soup to have a cold fall evening. I made this soup for the first time today, and it will definitely be a keeper in my home. First off, I don't fry foods, so I cooked the sausage in the microwave, adding the garlic to the beef broth and tomato mixture. We like green beans, so I added those instead of Northern beans. I also added the zucchini, and carrots, and spinach. In the end, I added 1/2 cup elbow macaroni. We had a salad and rolls to complete our meal. There is enough for leftovers. DELICIOUS!

Cherry Crunch

I made this recipe for the first time, we're having it as our 4th of July desert, and I'll serve it will vanilla ice cream. My husband and I just had to try a small slice this morning, and boy was it good. The combination of oatmeal, and cherries, is so yummy! I'll be making this again, thats for sure.
