Mexican Fire Rice

Reviewed: Aug. 4, 2011
I made minor changes to this. My six-year-old and I don't really handle spicy too well, so I put in about 3/4 cup medium chunky salsa and about 1/2 cup sour cream. I also use sage sausage because that's the only sausage I actually like. I use Daiya cheddar shreds on top. We now make this 3-4 times a month because we love it so much. Occasionally we'll use the leftovers in burritos the next day but usually we just eat it with spoons.

Kat's Alfredo Potatoes

Reviewed: Oct. 7, 2009
i did exactly what most everyone else did. substituted pizza cheese (hate swiss), added garlic powder, halved the milk, omitted onions (allergic), and added extra cheese and cooked 10 extra minutes. The top was golden brown, the potatoes were tender but not mushy, the sauce was the perfect consistency. i was thoroughly impressed with it all. thanks for the great recipe!

Kielbasa with Peppers and Potatoes

Reviewed: Sep. 24, 2007
I'd never heard of this recipe prior to a month ago, and already I've made it twice. The first time I made it exactly as specified. I did have a problem with the potatoes getting mashed a bit, so I turned the heat up to medium-high. From there on it was perfect! I had thought the food a bit too greasy, but I still ate 3 helpings! My two year old also ate plenty! The second time I made the dish, I decided not to use the oil, as some reviewers suggested. I felt, this time, that it was too dry and had more problems with sticking than the previous time. I did have better success with the potatoes not getting mushy because due to the higher temperature. I thought it needed a dash of salt when serving, but nothing else! This will definitely be a treasured recipe in our home. My only complaint: I eat toooo much of it! No dessert for a week!

Pastitsio I

Reviewed: Jun. 7, 2007
This is almost the same recipe that has been in my family for decades! Our recipe didn't call for bread cubes, however. As someone already mentioned, it IS an acquired taste, but our family added our own little "fixin's" for pizazz. I like mozzarella cheese on top. My mother enjoyed paprika on hers. My father liked black and green olives on his.

Gourmet Cheese Potatoes

Reviewed: Mar. 14, 2006
These turned out really well even with all the changes made and the mistake. First I halved the recipe (5 servings). I used 4 cans of diced potatoes in place of fresh ones, omitted the onion because I'm allergic, omitted sour cream because we didn't have any, and used mozzarella cheese on top in place of cheddar because that was all we had. Once it was in the oven, I realized I forgot the butter even though it was sitting on the table! (d'oh!) I needed it done in time to serve with dinner, so I raised the temp to 400 and only left it in for about 40 mins. The cheese on top was a bit brown and the potatoes could have been a bit more mushy, but it was still a hit! Hard to mess this one up, love it!! Will definitely make this one again. :-)

Family Casserole

Reviewed: Feb. 11, 2006
I made this tonight and loved it. I'm snowed in (which is unusual in the south) so omitted and substituted as follows: no onions, no celery, cream of mushroom instead of cream of celery soup, no water chestnuts. We also were super hungry and not making any sides to go along with this so we added a full pound of chicken, 3 cups of rice, and approximately 1/3 cup chicken broth. It turned out wonderfully, we wouldn't change ANYTHING!!! Thanks SO much for this recipe, we will DEFINITELY make this again! :-)
