Coconut Bread II

Very moist - perfect with coffee. I used vanilla extract because there was no coconut extract, still good.

Midsummer Night's Salad

Reviewed: Jul. 8, 2007
Too acidic. I would next time try orange juice instead of lemon and halve the amount of mint.

Slow-Cooked Corn Chowder

Reviewed: Dec. 17, 2006
Delicious, like the soup at the restaurant Cosi but better. I added 1 pound of chicken breast and extra corn. Accidentally used cream of chicken and mushroom instead. Used 2 cups of fat free milk and half cup of cream (left over, didn't want to waste). Next time will use all fat free milk. This is very rich, did not add salt or pepper.

Split Pea and Ham Soup I

Reviewed: Nov. 13, 2006
Way too thick, like watery mashed potatoes. I prefer the recipes that do not used dried peas but frozen (and using a hand blender).

Garbanzo Tomato Pasta Soup

Reviewed: Nov. 6, 2006
This was awesome. I hope I can replicate this. I had leftover chicken, beef, and lobster broth. (Majority Beef broth) I added more noodles (macaroni) and when done, I sprinkled some shredded colby cheese on top. For leftovers, I layered the containers with soup then cheese, soup and topped with cheese. Great and reminds me of minestrone.

Mushroom Pork Chops

Reviewed: Mar. 14, 2006
Gravy is very tasty. I used 4 small chops which totaled 1 pound. The cooking time is too long for small pieces, next time I would use fatter chops or cook less time. I used green beans instead of onions.

Chuck's Favorite Mac and Cheese

Outstanding and delicious. I halfed the butter for the bread crumbs and it is fine. I use half gruyere and this tastes great.

Irish Chicken and Dumplings

Reviewed: Sep. 25, 2005
Pretty tasty and creamy. I forgot to purchase potatoes but I added mushrooms. The dumpling batter was a bit hard to handle. I would use non biscuit mix next time, the dumplings were not cooked all the way through and was very dense.

Baked Macaroni and Cheese I

Reviewed: Sep. 20, 2005
This was a bit runny for me. Feels too much like a casserole with the onions and bacon. I would omit them next time -- but still very tasty.

Eggless Tofu Spinach Quiche

Reviewed: Mar. 25, 2005
This is pretty flavorful--I might choose sharper cheese next time. I added some small slices of ham in it to add saltiness. I also added mushrooms. A bit mushy--the problem was not defrosting the spinach properly and not draining the tofu as much. Next time I will use extra firm in stead of firm tofu. Crust is not needed, we cooked the stuffing only and put it on bread.

Chicken Spaghetti Casserole I

Reviewed: Feb. 27, 2005
This dish was a childhood favorite and I was pleased to see this recipe here. To make it like the dish I remembered, I omitted the onions, chicken, pimento, and peppers. I replaced the pimento with black olives. Very delicious and great for leftovers. Next time I would use less cheese--and try a sharper cheese. I would make this again.

Brunswick Stew

Reviewed: Feb. 26, 2005
This stew has so much flavor. The store didn't have the salt pork, so I substituted it with several slices of bacon. I put three slices for the initial boil, then put another slice in for the last hour. Excellent

This was really good, I replaced the snapper fish with Sablefish, which is a white fish similar to sea bass.
