Raspberry Lemon Muffins

Really pleased with this muffin! I did make a few changes, per suggestions and my preferences. I used 1 C, rather than 1/2 C. of yogurt, and used vanilla, because that is what I keep. I omitted the lemon extract and used the juice and zest of one lemon, rather than measuring. I like lemony! Also, I prefer my muffins very fruity, so I add another cup of raspberries, bringing it to 2 C. of frozen raspberries. Very pleased with this muffin, will not hesitate to serve it to others!

Chocolate Chocolate Chip Muffins

Loved these muffins!! Husband says they taste like bakery muffins. I did make one change, I used milk chocolate chips instead of semi sweet chips, but did leave the semi sweet squares unchanged. The milk chips give it a sweeter taste. I strongly recommend eating warm, either right out of the oven or warmed in microwave for 15 seconds.

Six Can Chicken Tortilla Soup

Yummy! As others have said, could use a little more spices. I made the Southwest Chicken one night then used the leftovers as a base for this a couple of nights later. Very good.

Cream Cheese Squares

Loved it! Per a suggestion, I added 1-2 tsp. of lemon zest (didn't measure it). I took it to a party and ended up having to email the recipe out to several people after it was all said and done. Everyone loved it!

Tangy Hawaiian Chicken

This recipe was quick and easy. I marinated the chicken for about an hour and a half. One MAJOR change---I made 1 1/2 times the marinade, as I will NOT reuse marinade that has been used on raw chicken. I went ahead and followed the instructions and boiled it, but I'm not sure what the benefit was there. I took this to a party and it went over great! Everyone loved it. To serve that purpose, I cut the chicken up into chunks, then put it over the rice. This was a great marinade and does great things for the rice, also.

Barbecued Beef

Best Marinara Sauce Yet

Opt for crushed tomatoes, up the garlic to two cloves and add a little more oregano and a little basil. Mix ingredients instead of dirtying the food processor. Very easy, very tasty sauce!

Fire and Ice Pasta

Decrease the amount of oil! Very heavy taste. Not your average pasta sauce recipe, don't use this unless you are looking for something off the wall. This recipe is not for everyone, don't serve it to company.
