Sweet and Sour Chicken Tenders

Yum! As far as home made Chinese recipes go, this was great. I skipped the browning and just put the sauce over the uncooked chicken and straight into the oven. It was fine. I also used apple cider vinegar because that is what I had. I will make this again when I am craving Chinese sweet and sour. It's quick, easy and I always have the ingredients on hand. Definately a keeper!!

Buckeye Cookies III

I made this because a family member is gluten free and I wanted to take a dessert to Thanksgiving dinner that everyone could enjoy. They were great, I received many compliments and was told that I am now to make this at every family get together! If you like peanut butter and chocolate, this is your recipe! I also loved the fact that they were simple to make and require no baking. Next time, I will double the recipe for the cookies, but not the chcolate. If you are making a single batch you may be able to halve the chocolate. Even with double dipping the cookies, I had quite a bit of chocolate left over. This is definately a keeper!!

Vegan Peanut Butter Cookies

These are great. They can burn quickly, so it is critical that you keep an eye on them when they are nearly done. Taste just like the traditional PB cookie (if not better) and are so healthy for you! You won't be disappointed!

Chicken Penne with Asparagus, Sun-dried Tomatoes, and Artichoke Hearts

Turned out GREAT! So good, we went back for seconds. Will make again!I didn't have sun dried tomatoes, so I used a small Roma, diced. Also, went with chicken broth rather than beef. Very simple recipe, easy to follow.

Oatmeal Peanut Butter Cookies

Made these at my husband's request for oatmeal PB cookies. I didn't think I would like them, but I did! However, I also added about 1/2 cup more PB (and used all natural, salt free PB to reduce sugar), slightly reduced sugar as well and added an extra cup of oats. The flour I used was half unbleached all purpose and half wheat pastry flour. SUPER yummy! We all love them, especially my kids!!!

Oatmeal Chip Cookies

These were great, HOWEVER I did reduce the sugar by half, as well as the chocolate chips. They are just sweet enough (and I am a junk food junkie!) and wih half the sugar, I don't feel so guilty eating them. I also used half unbleached all purpose flour and half wheat pastry (must be pastry for how fine it is ground) flour. I don't really agree with changing recipes so much, but it seemed like way too much sugar! Especially when I will be feeding a majority of these things to my kids!

Ratatouille

Great! Very flavorful with the Parm. cheese. I changed around the vegetabels to what was on hand...Eggplant, summer squash, tomato, red and green bell peppers, and red onions. I omited the salt and it turned out fine. I served it over brown rice and even went back for seconds!!

Chocolate Oatmeal Cookies

I have to say that after reading all of the great reviews, I was somewhat disappointed. The cookies were good, but I only ended up with 28 small sized cookies. I even added both raisins and chocolate chips. I think that there needs to be more butter or something like that, something that would add to the batter. It just seemed as if something was missing. The taste was good, although my husband does not prefer them.

Banana Banana Bread

Yummy. Didn't change a thing, however I did use 1 cup wheat flour and 1 cup Harvest King "Better for Bread" flour. The bread probably could have used a few more than the suggested 65 minutes, though, as it was still slighty moist on top. I seem to have this problem with all banana breads, so maybe it is just me!! Great recipe and truly a keeper!!
