Grilled Salmon I

I marinated the fish overnight, it still didnt have much flavor. I did cook the marinade w/ cornstarch, as some suggested. That definitely added flavor to the fish.

Carol's Arroz Con Pollo

I feel the rice to chicken proportion was off - there should have been more rice. Other than that - this is a great recipe. And remember to stir often so you dont burn the bottom. I would even suggest letting it boil - and when the water starts to get low - turn off the stove and let it sit a few minutes.

Pico de Gallo Chicken Quesadillas

I made these without chicken and apparently it was SO good - I didn't even get to taste any myself! (Which is why I can't give it 5 stars). I did, however, have leftover pico de Gallo - it even tasted good 2 days later!

Perfect Pumpkin Pie

I cut the pie crust into little circles, so they would fit into a mini muffin pan. I used Pumpkin Poie Spice like someone else suggested. The mini-pumpkin pies were a BIG BIG hit!!

Caramel Pecan Pie

Baingan Bharta (Eggplant Curry)

Fairly good recipe. Like others suggested, I used minced garlic & minced ginger. I recommend using less cumin. The yoghurt is a nice touch, takes the edge off the spice.

Baked Ziti I

I added equal parts ricotta and sour cream. It was lent - so I took out beef and substituted eggplant and bell peppers to the sauce. Very yummy! The recipes sounds like it calls for a lot of sauce - but you really DO need that much!!

Lemon Fried Rice

Master Recipe for Rich and Creamy Cheesecake

I made the tiramisu cheesecake. It was pretty good. The texture was definitely light and fluffy. And it actually tasted better the next day. Not an earth shattering recipe, though it won an award on USA Weekend...

Mango-licious Tilapia

This recipe was mentioned in USA Weekend - so I thought I'd try it! I HATE fish but this recipe was great! I couldn't taste the Tilapia at all (I assume by design). I thought the cilantro was a bit overpowering - but other than that, this is a great, quick, healthy, light recipe! My husband who hates all fruits and veggies loved it too!!!

Spanish Rice II

Really yummy! Just watch (and maybe stir) the pot during the 30 minute "simmering" process. The rice tends to stick to the bottom of the pan (and burn).

Maple Roast Turkey

I made this turkey for Thansgiving - it wasn't very good! I followed the directions - I even marinated the turkey overnight. The meat was FLAVORLESS!! The skin browns extremely fast and was also pretty flavorless. The only saving grace were the vegetables which absorbed most of the maple & herb - and tasted great. I've found that you need to put SOMETHING inside the turkey for the meat to have ANY sort of flavor. Perhaps if you stuff the turkey with carrots, celery and onion, in addition to having it on the side - there would be more flavor. I won't be making this turkey again.

Ojai Roast Turkey with Rosemary, Lemon, and Garlic

My husband and I selected this recipe for our very first thanksgiving together. We've never made turkey before. This recipe was easy to follow. It was a hit! Very juice and flavorful! I suggest the following: For FLAVOR - don't forget to add salt to the marinade. And apply some of the marinade between the skin of the turkey and the meat (as well as on the skin) and let it sit overnight. For MOISTNESS - cook the turkey upside down for the first half, then turn it right side up for the second half. Also baste every half hour. We had a 24lb turkey and it took longer than the suggested time. So plan for extra cooking time.

Tastes great with Spanish rice, fajitas or pita bread! I'm glad I took everyone's suggestion and ADD THE SOUR CREAM! This recipe is SPICY!

Strawberry Trifle

Really really easy to make!! I would suggest using REAL strawberries, instead of the frozen. Try substituting other fruits. I tried peaches - and they were a hit!
