Burrito Pie

Excellent recipe! I only use 1/2 the meat and beans and add taco sauce and tabasco to the meat while cooking. This is a repeat favorite at our house!

Chicken Tortilla Soup V

We absolutly LOVE this soup. I agree with the previous post, if I could give it more than 5 stars, I would. I use the breast sections from a rotisserie chicken, an entire carton of chicken stock and double/triple the spices. We also crumble the tortilla chips on top of the soup to keep them crunchy longer and add a dollup of sour cream. Excellent recipe!!

Bacon Chicken II

Made this last night with just a couple modifications. I sliced the bacon in half and precooked until about 1/2 way done. Poured 1/4 of the bottle of bbq sauce on the bottom of the baking dish, but other than that I followed the directions as provided. I highly recommend sweet baby rays bbq sauce for this recipe! Will be making again!

Mexican Pork Chops

I made this recipe 2 nights ago and have since forwarded to everyone I can think of - my mom's making it tonight. I took another reviewers suggestion and marinated the chops in a rub down of oil and 1/2 packet taco seasoning overnight and then used the other 1/2 packet of taco seasoning in the tomato mixture. I had 6 pork chops so I used 3 cans of tomatoes - 2 cans mexican style stewed and 1 regular. I also used 1 full cup of minute rice and added 1t. each cumin, cayenne and chili powder. Looking forward to eating the leftovers tonight!! I will try with chicken breast next time. Thank you for an awesome and EASY recipe!

Springfield Style Cashew Chicken I

We love this recipe. I've made a few modifications for our tastes: I only use 1 1/2 cups of cashew halves, I use 4 whole green onions and I reduce the amount of corn starch to 2T (can add more if needed). Also, you need to use enough peanut oil so that it is about 1 inch deep in your pan. Other than that, the recipe is AWESOME! This recipe is requested quite often at our house.

Flaky Crescent Mushroom Turnovers

Made these last night and they were fabulous! I used more like 6oz of mushrooms and dried parsley. I also added some shredded swiss to the mushroom mixture before putting on the crescent rolls. Like other reviewers, I had a hard time keeping my crescents together - they separated at the perforations when I took them out of the can, so I just used them in their regular triangular shape and folded them over sealing with a fork. I didn't use the butter on the top, but I did sprinkle with some garlic powder. I will be making these again and again! Thank you for a wonderful and easy recipe!

Pizza Without the Red Sauce

This pizza is to die for! I made a couple of changes: sauteed the onion first, used bagged spinach since that is what I had on hand, added sliced green olives and used fresh mozzarella (approx. 8oz) rather than feta. The "sauce" would be excellent as a dip for hot, crusty bread!! Thank you for this new and easy variation on the traditional pizza!

Stuffed Shells I

This dish received rave reviews and requests to make again and for company. The only changes I made were to increase the garlic powder to 1T, use 1/2 part-skim ricotta and 1/2 low-fat cottage cheese, and I used 1 1/2 jars of spaghetti sauce since we like the extra sauce. This also kept the leftovers from drying out. Definitely will be making again and again!

Beefy Baked Ravioli

I can't believe I waited so long to review this recipe. I've been making it at least once a month for a year. I make a few changes to adjust to our tastes - I use the entire package of ravioli, 2 jars of sauce, use the juice with the diced tomatoes and saute some onions and garlic with the hamburger/ground turkey/ground italian sausage (whatever I have on hand). I share this recipe with nearly everyone who asks if I have any good recipes to share - and they have all loved it. Awesome recipe and super easy to make!

Best Peanut Butter Cookies Ever

I am giving this recipe 4 stars only because I found that I missed the flour in the recipe. This recipe was super easy and it did make a good tasting cookie. I used 16oz natural pb, 3/4 cup brown sugar, 3/4 cup white sugar, 3t vanilla and nixed the salt. I will make these again when I have a craving for pb cookies without having all the ingredients for traditional pb cookies. I think next time I'll add 3/4 cup chocolate chunks, too! I did like the fact that there is no butter in the recipe. I would recommend trying if you haven't, you may be pleasantly surprised!

Linda's Lasagna

I made this 2 days ago and cannot wait to have the leftovers tonight! I loved the fact that you made your own sauce. It was simple and easy. I did add an extra can of diced tomatoes w/ italian spices to make a bit more sauce, used 1lb ground turkey and 1/2lb ground italian sausage, a mix of 8oz ricotta and 8oz cottage cheese and upped the spices a bit. I also made every layer the same: sauce, ricotta mix and mozz cheese and repeat. It worked perfectly with 3 layers of 4 noodles each. I also baked for 30 minutes covered and then 15 minutes uncovered like other reviewers. I will be making this again!!

Becki's Oven Barbecue Chicken

This recipe is SOOOOO good. The sauce is to die for. I made a few modifications based on personal taste and previous reviews: added 2T soy sauce, subbed 4T minced onion for the onion powder, added 1 clove minced garlic, added 2t. chili powder, and halved the amount of ketchup. I used 2 extra large boneless skinless chicken breasts cut into strips. I think the cook time was too long for boneless chicken, so if you're going to do it that way cut back the cook time by 10 minutes or so. Great recipe! Thank you for sharing!

Delicious Ham and Potato Soup

I have made this soup twice and wished I had doubled the recipe twice. The only change I made was to add more potatoes and more ham. I think it would be good with some frozen corn added during the last few minutes of cooking too. The title of the recipe says it all, it is "Delicious Ham and Potato Soup!"

Awesome Slow Cooker Pot Roast

This roast was awesome! I used only 1 can of cream of mushroom soup, subbed a can of beef broth for the water, used Lipton beefy onion soup mix and added some red potatoes and carrots to the bottom of the crock pot. Cooked for 3 hours on high & 4 hours on low. The meat was literally falling apart when I removed it from the crock pot.

Picante Chicken Rice Burritos

I'm only giving this recipe 4 stars since I think there should be some sort of sauce poured over the burritos before baking. I did not do this when making my first batch and the cheese dried out. However, after pouring some taco sauce & sour cream over the top they were still delicious! I only used 1/2 of the chicken/rice mix and froze the other 1/2 to use another day. This one is a keeper!

Different Chicken Cordon Bleu

We didn't expect much from this recipe, and boy we were pleasantly surprised with the end result. The only changes I made were: pounding my chicken to about 1/2", subbed 3/4 cup chicken broth for the wine, omitted the salt, and baked for 45 minutes based on other reviews. It was wonderful, and the leftovers were just as good a few days later. Thank you for a great recipe. It will definitely be going into the rotation.

Husband's Delight

We thought this recipe was just ok. It's most likely due to our personal preference of bolder flavors. If you have a family that prefers mild flavors, then this recipe may be the one for you. I could give it more stars with heavy modifications, but then it wouldn't be the same recipe. Give it a try and see what you think!

Whit's Chicken Enchiladas

LOVE, LOVE, LOVE these enchiladas. We had been on the search for an enchilada recipe that didn't require red sauce and stumbled across this one. The only change I make is to use three boneless skinless chicken breasts which I poach with seasonings and shred to use for the filling. Follow everything else to the tee and it's wonderful :)
