Black Bean and Salsa Soup

I was skeptical that such a simple soup could really be as good as the reviews indicate. WOW. That's all I can say. This soup is awesome!! Next time, I'll probably only blend half the black beans; I typically like my soup a little chunkier.

World's Best Lasagna

My husband and I spent most of the night making this, and it was just OK. We followed the recipe exactly, and I would make a LOT of changes to it before trying it again. First, it was waaaaaaaaaaayyyyyy too salty. Yuck! Second, I'd add more ricotta and spices, and probably more sugar. I'd also reduce the amount of beef or perhaps just stick with sausage. I may also add a box of frozen spinach to the ricotta mix. I'll play with this recipe, but I definitely won't make it again as-is. If this is traditional lasagna, I guess I'm just not a traditional kind of girl.

Texas Caviar I

Yup, this was phenomenal. I don't know if I was supposed to seed the jalapenos, but I did. I don't mind a little kick, but didn't want it to be too spicy. I also lightly rinsed the beans and peas so the mixture wouldn't be too gooey. It turned out perfect and got rave reviews at the Superbowl party I attended. I'm not even a big fan of bean dips, but this is a healthy snack that I'll definitely make again.

Monster Cookies VIII

These cookies are no culinary masterpiece, but they're easy and a huge crowdpleaser. I doubled the recipe (nearly 70 cookies!) and took them to work; they received many compliments. My roommate, who tried one, asked me to help her make a batch to take with her on a camping trip. I followed exactly except for using 1/2 cup ss chocolate chunks and 1/2 cup ss chocolate chips, as well as adding 1 cup of M&M's. Pecans are also good instead of walnuts.

Quick Cassoulet

My husband loved this, but I wasn't as big a fan. It was definitely tasty, but I wouldn't make it again without some modifications. Instead of smoked sausage, I'd probably use spicy Italian sausage and increase the amount to at least a pound. I also had to cook this for much longer than the recipe indicated to soften the veggies and cook off the excess liquid. Don't think I did anything different. I may try to prep at least part of this recipe in the crock pot next time so the veggies get nice and soft.

Fluffy Pancakes

I've made these several times now, and it's the only pancake recipe I use anymore. Very versatile; this morning I used butter because I didn't have any shortening, and I added a teaspoon of cinnamon and a half teaspoon of vanilla extract. They practically melted in your mouth! Thanks for the great recipe.

Cranberry Orange Loaf

I suppose I'm not much of a cranberry person, but I had extra cranberries in the freezer, and we didn't have anything for breakfast. My boyfriend really likes it. I used 1/4 cup of brown sugar, and 3/4 cup white sugar. I also added about 3/4 teaspoon vanilla. It came out of the oven in one hour with a perfect crust. It's moist and appears to be holding together well. However, I won't make it again -- the bitterness of the cranberries is a little too much for me.

Quick Quiche

This recipe is great and very versatile. I used honey ham lunch meat, and laid it over the shredded cheese on the bottom of the pan. It turned out great after 35 minutes in the oven and 4 minutes under the broiler. I might use a little less salt next time, but my boyfriend loved it as is.

Chocolate Mint Cookies I

These cookies tasted OK, but were not at all what I expected. Even after varying the baking time, they were still as flat as pancakes. I might make them again, and use shortening instead of butter, and cake flour instead of all purpose. To the credit of the original recipe, my boyfriend did enjoy them.

Vegan Chocolate Cake

This cake is so amazing: light, fluffy and moist. I made it as cupcakes thinking, "I'll just make mini cakes so I'll have little bite-size servings." Well, I guess that only works if you don't pop three in your mouth in a row :) Oh well. If you do opt for cupcakes, I'd recommend greasing well and flouring, or using cupcake wrappers. Mine did stick to the pan and were difficult to get out, but they still baked well and didn't burn. Will definitely make this again. I'd like to find a way to make it more chocolaty for when I really need a "fix."

Fluffy Pancakes

I just made these with a few minor changes. I used slightly soured buttermilk instead of the milk/vinegar combination, whole wheat flour instead of regular, and I added about 1/3-1/2 cup of semisweet chocolate chips. They were THE BEST pancakes I've ever had. I'm pretty sure I just consumed most of my calories for the day, but man, what a way to go!

Chocolate Chocolate Chip Cookies I

Per previous suggestions, I used 1/2 c. butter-flavored shortening and 1/2 c. butter to try and retain moisture. I also used 1/2 c. brown sugar and 1 c. white sugar. The cookies turned out great - wonderful taste! Be careful not to overbake (8 minutes was definitely enough). Also, eat quickly; they get just a little dry in the days after they're made - even if they're sealed up.
