Basic Flaky Pie Crust

Great crust! I've made many and this was very easy, flaky and delicious. I substitutted sweet cream butter for shortening and for half of the flour I used whole wheat flour. I also added a dash of cinnamon and 1 tablespoon of sugar.By doubling the recipe, I had plenty for a lattice top crust and small heart-shaped cutouts.

Maple-Soy Glazed Salmon

This was excellent! I made a few adjustments to bring more flavor to the salmon and to cook inside rather than out. I used double couarsely ground salt and pepper and heavily rubbed the top of the salmon. I also put 1 tsp of ginger and garlic in the glaze mixture. I then lightly pan-seared the salmon in olive oil on one side, placed the fillets in the oven on broil and basted with the glaze about 4 times for 10 minutes (I prefer my salmon more well done than not). It was easy and quick to make and my guests loved it.

Apple Crisp II

I loved this recipe as it is written but wanted it a bit more healthy for some guests' needs. I substituted whole wheat flour and instead of using 1 cup of flour for the topping, I used 1/2 cup flour; 1/4 cup ground pecans; 1/4 cup slivered almonds. It increases the fat, but decreases the white flour content. I also used a Splenda Blend instead of the sugar.

Pesto Sauce

I agree with others: I decreased the olive oil to 1/2 the amount; added a bit more cheese (1/2 cup instead of 1/4); toasted and used pine nuts instead of walnuts; added about 1 T fresh lemon juice.

Bar-B-Q Baked Beans

This is great and looks very unique when baked. I added turkey bacon instead of pork bacon and maple syrup (real maple syrup, Grade B) instead of molasses. I'll make this again.

Pumpkin Turkey Chili

This was good and easy. It seemed a bit bland without some additional ingrediaents, so I also added a few things like others: 1 tsp cumin; 1 can white northern beans; 1/4 cup maple syrup; tomato sauce.

Apple Stuffed Chicken Breast

This was really good and made an impressive presentation. It is also really easy -- the hardest part is wrapping the chicken around the stuffing. I didn't have toothpicks so I used uncooked spaghetti, which held just long enough for the chicken to bind and then just softened and cooked. I also did not have cheddar cheese so I used asiago. Like others, I also seasoned the chicken and added oregano and thyme while it was cooking. I served it with pan roasted potatoes and peas. I'll make this again and often!
