Baked Potato Soup II

Easy. Microwaving the potatoes is a great idea. It makes a heaping serving. I added salt and cracked black pepper as the roux was cooking and dried onions( I didn't have fresh green onions or else I would have used them and maybe some garlic). I threw this together but with more planning I can make it better. It tastes rich but I did not use the sour cream. The cheese and sour cream will help but I would suggest letting the individual decide how much of those items they'll want in their bowl. I also added turkey bacon and what bacon drippings there were. Overall, a fast and family friendly meal. Thanks JW.

Microwave Peanut Brittle

A winner. Easy. Fast. I won't ever make it the old way again. Light and crunchy. I used a bit more butter and used oil spray on a metal spatula to spread it out.

Hash Brown Casserole II

I thought it was just okay. But I am giving a higher rating based on my co-workers. Many wanted the recipe and commented that they liked it. I used green onions and Colby cheese. I wasn't fond of the slightly mush texture, so next time I'll try less soup and less sour cream. I thought it was too sour tasting but others disagreed. One suggested a small can of Ro-Tel which would be more to my liking. I didn't use the crust but someone suggested using bread crumbs. I'll try that too. Not bad. Thanks :)
