Oatmeal Peanut Butter Cookies

I was worried that they wouldn't turn out because I was using some organic PB that needed to be used but they turned out nice & crisp on the outside and chewy in the middle. I also used butter in replace of the poison...I mean margarine. I did have to flatten the dough balls on the pan because the dough was pretty firm, but I will definitely be making this recipe again!

White Chocolate Chip Oatmeal Cookies

The dough was very dense and almost dried out by the time I got to the 3rd pan. Mine didn't spread like some other reviewers, but I did use parchment paper rather than greasing the pan. I think I would cut back the flour, but I hate to adapt recipes, so I would probably just as well not make this recipe again.

Light Oat Bread

This was terrific. I did not use a bread machine, but I added the flour, oats and salt to a stand mixer and combined the rest of the ingredients in a 2 cup measuring cup. I usually microwave the water about 1 min first to get it to the right temperature, about 110 degrees. Then slowly add the wet ingredients to the dry using the hook attachment. It should come together in about 10 minutes. You may need to stop the mixer a few times to turn the dough and scrape down the sides. Once the dough comes together, form into a ball and place in a greased bowl and cover with saran wrap. Let rise until doubled in size, about 1 hour. Punch down and roll into loaf shape. Transfer to greased pan and cover. Let rise 20-30 minutes. Bake at 350 for 40 minutes.

Bar Cookies from Cake Mix

I followed the recipe to a tee and made no modifications...it turned out great! It was a big hit at my workplace. Very simple & delicious. Be sure not to over bake these bars as they do firm up after you take them out of the oven.

Eggless Peanut Butter Cookies

I found this recipe because I had some buttermilk left over from a carrot cake recipe, so I did a search using it as an ingredient. Though I found these eggless cookies to taste ok, they crumbled apart too easily. I would only recommend this recipe to those who have egg allergies.

Peanut Butter Fudge I

First off I am an amateur fudge maker, so I was looking for a starter recipe. This was a good beginner recipe, but I will note that the first step does take at least 30 minutes, so it's no 5-minute fudge! Also, mine turned out grainy, but that could be because my friends were over and wanted to try it, so I put it in the fridge to let it set. Next time, I will just leave it out to set and maybe that will change the texture.

Broccoli Chicken Casserole I

This is a great "base" recipe to add your own modifications, but that's the joy of cooking. You don't always have to follow a recipe to the tee. I did end up following the advice of others & adding a can of cream of chicken soup and replacing the mayo with 1/2 a can of milk. I also added 1/2 uncooked rice and just sprinkled the dry stuffing mix on top. Baked at 325 for 1 hr 15 min (to allow for the rice to cook).

Step 2 1/2: Press down with a fork in a criss-cross pattern. I did add 1/2 tsp of vanilla and baked 14 minutes. They weren't baked after 6-8 minutes.

Cold Tuna Macaroni Salad

This was weird. Not the cold macaroni tuna salad I expected. The tomatoes definitely watered down the salad. It says it serves 6, but it's more like 16, and I didn't even use all the noodles!

Baked Apple-Pecan Maple Pancakes

This was a great way to use up that box of pancake mix that's been in my pantry forever. If you are worried about the batter being dry, I shredded 1 medium apple into the batter and it made it so moist and delicious. I also used cinnamon sugar rather than plain cinnamon. I didn't have nuts, but tasted great anyways!

Amber's Sesame Chicken

This was really tasty with steamed snow peas (in the pod) in replace of the green pepper (use two packages from the frozen section at the store). I didn't double the sauce per other reviews, but added a little more honey. I also added some garlic salt to the flour mixture. The chicken would have been too bland without it. I will definitely make this again.
