Basic Chicken Salad

Such an easy recipe that is so versatile. I use 1/4 cup olive oil mayo instead as well as a little onion powder. The lemon basically eliminates the need for salt. I also try to change up the flavors by adding dried cranberries, raisins or roasted unsalted sunflower seeds. I omit the almonds because the kids don't like them.

Asian Coleslaw

I love coleslaw and hate mayo. This was a great take on one of my pot luck favorites. I would make this again definitely. It was a hit at the church picnic.

Chinese Chicken Fried Rice I

Very easy to make. I modified the vegetables a little bit, using regular frozen peas instead. Everything else I had on hand, it was quick week night dinner. I used fresh rice from the rice cooker, I found the end result to be quite similar to what you get at a hibachi style restaurant (Benihana). My kids ate it all and asked for more, That's the best compliment a mom can get when trying a new recipe.

Classic Minestrone

This was great. I added tortellini instead of elbow macaroni and it made for a heartier, stew-like soup. A new favorite in my family. AAA++

Broccoli and Rice Stir Fry

Had a bunch of left over white rice in the fridge. On my way home after a long day at work; I thought "Hey what about fried rice". This recipe was simple and I had everything on had. Such a great way to use the left over rice in a healthy and yummy way. I added mushrooms, chopped yellow onions and 2 tablespoons oyster sauce. It was great. The kids love it.

Jose's Shrimp Ceviche

I have made this several times. It's always a hit at get-togethers. I like to try different variations. I am going to try adding mango next time. Spicy & sweet. I also use imitation crab and 4 jalapenos, 1 wasn't enough kick.

Green Bean Bundles

I made this for Thanksgiving dinner. They were delicious. I only wish I knew how to get the bacon crispier. Next time I will try baking them on a rack and basting with the sauce.

Artichoke Chicken

I made this dish tonight. It was really good. I followed some of the users suggestions and sauteed the artichokes with portobella mushrooms and garlic. I also used half mayo and 1/2 plain yogurt and put breadcrumbs on top. The kids liked it, so this one is a keeper.

Hamburger Stew

Made this for dinner tonight. Easy meal with stuff from the fridge. Great for those cold winter nights. Left out the beans though and used tomato basil sauce that I had left over instead of the soup. Kids (5 & 2) ate every drop in their bowls.

Lemon Garlic Tilapia

The kids really like it. Will make this again for sure. I've done similar with salmon,. Also only cooked for 10 minutes. It was perfect.

Chocolate Zucchini Cookies

The taste was bland, more biscuit than cookie. They really lacked pizazz. If I ever make these again I would add chocolate chips and/or nuts.
