Orange Pecan French Toast

OVER THE TOP!! Served on Christmas morning and only changes I made was to use 1/4 C of Grand Marnier and only 3/4 C of OJ. Used 3 eggs and 2 egg whites. Will definitely be our new Christmas brunch tradition for years to come.

Mom's Best Peanut Brittle

This recipe is awesome. It was my first attempt at making peanut brittle and I could not believe how easy it was. I used cashews instead of peanuts and it turned out so great that I immediately made a second batch. I used a silpat and sprayed with Emeril's butter spray and no problems with setting up or lifting off. Can't wait to make more, although it's quite addictive. Hated to tell my Mom it was better than hers but wanted to share this recipe with her.

Grilled Pork Tenderloin

Just made this on the grill and I must say I may now be a devotee to the indirect cooking method. Could not believe how juicy the pork tenderloin was. Put the barbecue sauce on the last five min and moved it over to the gas side for about two more min just for good measure. It was exceptional and will be a keeper on our summer/fall menu for sure.

Fish Tacos

Made these last night and had we closed our eyes, would have thought we were back in San Diego at Rubio's Fish Tacos! Just outstanding. I used light sour cream for the yogurt as well. Cut back 1/2 on the jalapeƱo and cayenne even though I love spicy. Scared the heat would be too much for my family. Will add the correct amount on the cayenne next time. I also used walleye for the fish. Added in chopped cilantro. This one is a keeper for sure!
