Portobello Mushroom Burgers

We served these on whole-grain English muffins with a little canola mayonnaise... Awesome! My husband is definitely a meat and potatoes man, but we tried these anyway, fully expecting NOT to like them. We were SO wrong!!! These will make a regular appearance on our menu. We paired the "burgers" with a salad and were quite full! The bonus: few dishes and a very easy clean-up afterwards. If I could give these 6 stars, I would!!!

Foolproof Rib Roast

I used a 2 1/2 lb. boneless roast. Left in oven for 1 and 1/2 hours, then for 1/2 hour when I turned the oven back on. In addition to the spices mentioned, I also added about a teaspoon or so of dried thyme. GREAT recipe, and I'll definitely use again. (and Yes, it WAS hard NOT to open the door, but the results are worth it) My husband loved this!

Rita's Sweet Holiday Baked Ham

I used a 3 1/2 lb. spiral ham, so scaled the recipe down to 6 servings, and put it in the oven for 45 minutes. THE best ham I've ever had. After the meal, I put the leftover ham in a baking dish, then poured the liquid from the bag over the ham, and stored it in the fridge overnight. The second night's meal was even better...the meat picked up more of the sweetness of the sauce. Will definitely use this recipe again!

Alfredo Light

Hard to believe this is low-fat! Wonderful! Instead of cooking garlic & onion separately, I simply mixed two to three teaspoons of garlic-infused olive oil into the chicken broth. Didn't want to use up all the milk in the fridge, so used low-fat evaporated milk (1 cup low-fat evaporated milk plus 1 cup water). Will definitely make this again & again!

Alternative Baked Salmon

Great taste; we enjoyed it, however, had to bake it an extra 20 minutes because the center was still on the raw side. I used dried minced onions, 1/2 teaspoon minced garlic (from a jar) and light mayonnaise and they worked just fine. Would make again.

Rosemary Marinated Lamb Chops

I marinated these for about 2 hours. I don't usually care for lamb, but must admit that these were WONDERFUL! Served them with baked little red potatoes and steamed asparagus. I'm still getting kudos from my husband! Will definitely make these again. I used the loin chops and they're worth the extra money. Very, very tender and great flavor from the marinade.

Grilled Salmon I

I marinated the salmon for 1 1/2 hours. Sprinkled it with lemon pepper and garlic salt just before putting it into the oven. Baked it for 40 minutes at 400...wonderful! Will definitely make again.

Frosted Banana Bars

Excellent! I didn't have a jellyroll pan, so used 9X13", baked the bars at 400 degrees for approximately 30 minutes. More like banana cake, but my family loved it. I've used both the home-made cream cheese frosting, and the canned frosting, but the homemade is much, much better.

Steak Tip Marinade

I used garlic salt instead of pepper. Relatives liked this so much, they took the recipe back to the Carolinas with them! Have made this several times now, and used either fat-free or "light" Italian dressing. Very, Very good!

BBQ Teriyaki Pork Kabobs

All I can say is "WOW"! The most tender pork we've ever had. My husband said it's one of the best meals he's ever had, and definitely wants to have this again. (I did omit the red pepper flakes.)
