Bacon Roll Ups II

Extremely easy to make.I found that I didn't need the toothpicks to hold everything together.When I made this for a party, my sister-in-law begged me for the recipe.A BIG HIT!

Sour Cream Apple Pie II

excellent and delicious!!!!!! the sour cream filling made the difference in this delicious pie. i'm not that great of a baker, so i used a store bought, refridgerated pie dough, which made assembly a snap. the second time i made this i used 6 medium sized apples(2 different varieties for added interest) and the pie was a lot biger and still awesome. great recipe.

Cranberry Bars

AMAZING!!!I made these bars at holiday time and they were a HUGE HIT. Not only is the recipe extremely easy, it keeps for several weeks. My teenage stepson has requested that I make this again.

Florentine Artichoke Dip

Delicious!!! I made a slightly different version of this dip and then made this one. The marinated artichokes are the key! This dip has so much flavor. This is one of my stand by dishes for get-togethers, always popular.

Albondigas Soup I

Excellent!!! Easy, flavorfull and satisfying. Searching for salsa verde is worth the trouble, my store carried only 1 brand. i took the advice of other reviewers and used 1 full cup of rice, but next time i'll cut the salsa down because my husband is not a big fan of spicy foods. my picky 15 year old stepson and i each had 2 large bowls, it was absolutely delicious. a definate keeper.

Best Chocolate Chip Cookies

excellent recipe. very easy and versitile. just the right combination of crisp and chewy. i've used different flavor chips, with and without the nuts and they've turned out every time. the recipe is so easy i was making them without referring back to the reipe card after my first attempt. definately a keeper. i have found that the softer the butter is, the flatter the cookie is. i prefer a softer thicker cookies, so i just barely soften the butter in the microwave. i also use a sugar subsitute blend and egg subsitute as well. these cookies are perfect every time. in fact, i'm now required to make two double batches for the monthly managers' meeting at work, if not, there's 12 extremely unhappy men and women.

Classic Peanut Butter Cookies

awesome peanut butter cookies, soft and chewy. i used creamy peanut butter because i'm not a big fan of little crunchy bits in my pb cookies. 2 tips however. the dough is very sticky, so it's a good idea to dip your fork in some flour before pressing them down for the "classic pb cookie" markings. also, depending on your oven it's wise to watch the browning around the 8-9 minute mark on the timer. in my oven, 9 1/2 minutes made for the perfect;y browned cookie

Buttermilk Biscuits I

awesome recipe! i have been looking for the pefect biscuit recipe for a while now, something to appease my craving when i can't get to the local cracker barrel. IMPORTANT TIP----if you don't have self rising flour, add the additional 2 tsp baking powder and 2 tsp salt as recommended by some of the other reviewers. i have a feeling this is why some people are not getting the proper results. i did, however, omit the sugar. didn't feel that was necessary since i'm making it savory purposes. turned out great. also, maybe b/c i used a whole milk buttermilk, there was a slight bit more tang than i'm used to. i may just stick w/the plain old low fat buttermilk; i just happened to have the whole milk kind on hand and it is much richer than low fat, i'm always tweaking my recipes. also, for those who don't normally make their own biscuits from scratch biscuits-the dough is extremely sticky. don't be afraid. just dump about a cup of flour on your counter, turn out he dough, sprinkle more flour on top and knead about 10x. make sure you flour your rolling pin and you'll have a perfect, soft dough to cut into. i use a soup cn w/the ends cut out and it made about 12-13 biscuits. i brushed the tops w/butter. i may do that after baking next time instead of before. in my oven, i baked for about 18min. just keep an eye for browning. all in all, quick, easy and delicious. a keeper. thanks.

Split Pea Soup

delicious and hearty. i use chicken stock instead of water and add cubed chunks of ham steak. otherwise, no changes. i normally delay adding any salt til it's almost finished cooking b/c the ham bone is normally very salty. this soup definately brings me back to my gram's split pea soup. which, i have to admit, when i was a kid, i wouldn't touch. but now this is one my faves and i'm making it every 2 months. i make a double batch, a 10 quart stock pot, and freeze it.

Baked Potato Soup

yummy! my husband requested taht i make baked potato soup so i chose this recipe after reading all the raves. it's so easy and delicious.i was originally expecting to be simmering for hours. the bacon and broth are the keys, they add so much flavor. thanks so much it was a big hit.

Carol's Arroz Con Pollo

yum yum. this is very easy and extremely tasty. i do not use alcohal w/my cooking so i just subbed extra broth. i may just cut down on taht extra liquid next time, the rice was a tad on the wet side when the dish was ready. but that had no impact on the flavor. this was sooooo delicious! i could'nt find saffron @my store so i used some tumeric for color. hopefully i can find saffron in the near future so i know what that adds. a big hit w/the family and at work. i referred my co-workers to this recipe. it's so good. thanks.

Good Old Fashioned Pancakes

sooooooo easy and delicious. i no longer use boxed pancake mux any more, this is just as easy and way better! the only thing that i have changed is to cut back on the milk just a tad to get fluffier pancakes. yummy and so much cheaper than the box, i ALWAYS have the ingredients on hand. a real keeper.

Mrs. Sigg's Snickerdoodles

i had a special request for snickerdoodles from a co-worker. my only experiance w/them were out of a box. i chose this recipe because all of the high ratings. they are absolutely delicious! i used my usual cookie scoop and ended up w/24 jumbo snickerdoodles. they are not too seet and the cinnamon sugar coating gives them that extra little "something". i will definately be making these again and again. very simple to make. thanks for the recipe!

excellent cookies! soft and chewy. i had a request for oatmeal ccokies at work and chose this recipe. very easy and yummy! i normally add raisins. my only complaint is that the dough is very stiff, but obviously that can't be helped. i actually broke my cookie scoop making these one time! LOL. but they were worth it. thanks so much for the recipe. i make them often!

Mouse's Macaroni and Cheese

this is pretty much the only mac and cheese i make. the only change i have made is to use 1 tsp of seasoned salt in lieu of the pepper and mustard powder. sometimes i used crushed buttery crakers mix instead of bread crumbs and mix in a little shredded cheddar for a nice crunchy top. i love creamy baked mac and cheese and this is creamy and cheesy. it also works well for stove top mac and cheese, just double the macaroni, cook it until it's just tender and add to the cheese sauce. also, it reheats very well. my 7 year old won't touch mac and cheese, unless it's this stuff. i just have to tell him it's "mommy's mac and cheese". i get many requests from my family to make this. i've made it so many times, the recipe is memorized. better than the box, by far. YUM-YUM!

Creamed Chipped Beef On Toast

simple, economical and tasty. honestly, my dad used to force this stuff on me when i was a kid. for some odd reason, i had a major craving for good old creamed chipped beef on toast one day and this looked easy enough. the only i adjusted was to use lots of black pepper. the whole family loved it, including my 7 and 8 year old sons! they actually request that i make this. and i tell you, on a cold winter's day, very comforting. not to mention, budget friendly. my store doesn't carry jarred dried beef, but buddig's sliced beef works just as well (and is probably less salty). thanks so much.

Best Hot Crab Dip

this is a really yummy dip. i've made it several times for family functions and even the crab haters eat it. i do chop up the capers since they can be overpowering. makes quite a bit and i always have sevral people surrounding the dish dipping into it. tasty and easy. thanks for the recipe.

Pumpkin Muffins II

Yummy! I didn't have allspice and reduced the clove and nutmeg by half and it turned out great.. Very tasty and easy. The kitchen smells great and the muffins are terrific. Canned pumpkin works perfectly. When I made this, i ended up with 18 muffins.

Sour Cream Coffee Cake III

Very dense and moist coffee cake. Maybe a little too moist for my taste (and my younger son's taste). I took it to church for the snack after Sunday school and the entire cake disappeared. So, it is a winner. 4 stars since I did reduce the sugar to 1 cup and it was plenty sweet. I also made double the filling/topping, but did not need use all of it so I would recommend sticking to the recipe in that regard.
