Asparagus Quiche

Wow! This was amazing. I didn't have swiss cheese, so I used cheddar instead. In addition to nutmeg, I added a bit of garlic powder, onion powder, and cayenne pepper to the egg/cream mixture. I baked it in a 9 inch square cake pan without the crust. I will surely make this again, again, and again!

Spicy Chicken and Sweet Potato Stew

We were very happy with this stew. I used chicken broth instead of water, white kidney beans instead of red ones, and red bell peppers instead of orange. The lime juice rounds out the flavors nicely. The stew was a bit thin for my taste, so I let it simmer with lid off for another 20 min. I had so many sweet potatoes left over from thanksgiving, so this was a nice recipe to make use of them.

Oven-Fried Catfish

Wow, these catfish were so delicious. My husband, who is from TN, was craving a bit of taste of home. He grew up eating fried catfish, so I tried this recipe. He was unsure of baking instead of frying but the fish turned out better that we expected. I don't like deep fried food, so this was perfect for us. The only changes I made was the following: - no celery seed (we didn't have any.) - garlic salt instead of salt, onion and garlic powder

Fish Roll-Ups

Very delicious. I used red onions. I also added paprika, lemon juice, thyme, and white wine to the crab. I forgot to add crackers to the crab mixture, so I ended up sprinkling on top of fish. It still tasted delicious. I used very little butter and used olive oil to saute the stuffing. I served it with wild rice pilaf. Quick and easy. I will definitely make it again.

Chicken Tetrazzini

This was very delicious. I used 1/2 of suggested flour. I also added some white wine and italian herbs (mainly thyme, oregano, and some basil) in the sauce. Instead of garlic salt, I used fresh minced garlic. I think cooking the chicken first and then setting it aside helped. I also cut up the chicken before adding it back to the pasta. I will definitely make this dish again.

World's Best Potato Soup

I made it into a potato and broccoli soup. It came out very delicious although my partner thought it wasn't thick enough. Since we don't eat pork, I omitted bacon. I served it in a sourdough bread bowl on a chilly day. It was perfect! I will definitely make it again.

Eggplant Mixed Grill

Trout Amandine

I just made it for dinner and it was a huge success. My husband caught a trout today and the simplicity of the recipe complemented the freshness of the fish very well. I served it with pirogis and steamed veggies. I will definitely make it again but probably use less butter.

Ann's Shrimp Etouffee

Thank you, Ann. I have been always afraid of making shrimp etoufee, and this recipe made it so easy. I added some thyme, rosemary and basil and 1 chopped tomato. I also used a pinch of cayenne and dash of tabasco sauce. It didn't thicken as much as I wanted, so I added some corn starch at the end. I will definitely make it again.

Spinach Tomato Tortellini

It was ok. Solid, quick dinner. I thought it was bland, so I added chopped ham, thyme, red pepper flakes, and italian herb mix. If I make it again, I would add more fresh garlic and onion. I would also use some wine.

A huge success! I didn't have any tomato sauce or v8 juice, so I ended up using a can of diced tomatoes and 4 ripe vine-ripe fresh tomatoes. I added worcestershire sauce to add depth as it was mentioned in another post and it really helped. I used 2 zucchinis and 1 yellow onion. I also added some peas and potatoes instead of pasta. I agree with others that this is a very good base recipe that you can play with. The recipe did make a lot of soup. It tastes much better the next day.

Pollo Fajitas

Oh my god!!! It's so delicious. I added some thyme, a bit more cumin and chili poweder and then served it with avocado instead of sour cream. This was a huge hit. I will definitely make it again!

Sausage & White Bean Soup

Very delicious! I made a mistake of putting salt while sauteing vegetables. It turned out a bit salty but I added more water. It was very good with crusty baguette bread. I also added some oyster and cremini mushrooms that were in the fridge. Yum!
